Sauerkraut Soup I

I definitely did not expect to like this, but the flavors do mellow quite a bit... Still a little too "kraut-y" for me, but my parents and a Polish friend loved it.

Cranberry Sweet Potato Bake

Much too sweet - I'd cut the sugar by at least half, since the o.j. adds a lot of sweetness. Don't boil the sweet potatoes, you lose a lot of nutrients into the water! Just add to baking dish with the other ingredients and they'll cook perfectly - just might need to increase baking time by about 10-15 minutes or until potatoes are tender. Instead of granola I used chopped pecans to make it a little healthier and less dessert-like.

Herbed Potato Soup

Giving 4 stars because we made some modifications... Chopped and sauteed several slices of bacon (just because we had some that needed to be used) then removed from pot, added about 2 tbsp butter to the bacon fat and then cooked the onions in that. Added more potatoes and some shredded gruyere, used an immersion blender to make it a smoother soup. Incredibly delicious!

Escarole Soup

I omitted the tomato sauce, and added a couple of cloves of garlic to the sausage and it was so delicious - my friend and her 2 year old daughter both loved it as well. Make sure you note Melanie's added instructions to pinch the sausage into small meatballs and fry in oil, also add a small pasta (I used tubettini) towards the end of cooking.

New Orleans Corn Bisque with Smoked Sausage

Ok, I almost omitted a star because of how unhealthy this soup is, but thought that wouldn't be fair because it really was tasty and soooooo easy. My husband LOVED this recipe, but unfortunately he'll probably have to wait a long time before I make it again - this is definitely a special occasion dish, or something to eat after a 10 mile hike!

Homesteader Cornbread

Excellent cornbread - definitely the best recipe I've found so far. I used a 9 inch glass pie plate and it came out perfect, and stayed moist for several days (I left it in the pie plate and cut wedges as needed). I think it would work really well in muffin tins, will try that next time.

Apricot Noodle Kugel

I'm not a big fan of sweet kugel, but my guests liked this a lot. I added chopped dried apricots and omitted the topping - it was totally fine without, and the edges of the noodles sticking out on top got nice and crispy. This is definitely a dessert - quite sweet and pretty rich. Next time I'd probably cut down the white sugar by half, since the nectar adds a lot of sweetness. Also, the middle never set, so I might add an extra egg?

Creamy Rice Pudding

Simple, excellent recipe. I use leftover rice (short or medium grain white is by far the best) and just from personal preference omit the butter and raisins, and sometimes reduce the sugar - but the recipe is delicious as is. Creamy and rich, and so much better than store bought.

Fruit Oatmeal Cookie Bars

Served these bars alongside cupcakes from the local cupcake shop...amazingly, the bars disappeared first. For best results, follow the recipe for the "dough" part (feel free to experiment with fillings). I tried to do a "healthier" version with applesauce and whole wheat flour - they were not nearly as good.

Pennsylvania Dutch Pickled Beets and Eggs

These always disappear in minutes (okay, days). I use fresh beets - boiled, peeled, and sliced - and they come out nice and pickled with the eggs. The recipe is a bit clove-y for us, so I omit the cloves or just throw in a few, and slice the onion (rather than chop it) so that it's easier to eat.

Slow Cooker Beef Stew I

Good, basic recipe. I add extra veggies (whatever I have on hand) and if there's time, brown the meat and deglaze the pan with red wine. Otherwise, just throw it all into the crock pot and add a splash of wine. I was out of Worcestershire sauce, but it was fine without. The wine does the trick.

Chicken with Chipotle

This turned out okay - the sauce curdled in the pan, giving it a slightly gross texture. We liked the heat and flavor, but overall it was a bit rich for our taste.

Apple Oatmeal Crisp

Excellent! My husband and I both loved this recipe, and it is SO EASY - I already know it by heart! The second time I made it I crushed about a half cup of sliced almonds and added them to the topping mixture. Even better!

Chorizo and Lentil Stew

Delicious, and couldn't be easier! I used linked chorizo (peeled the casing and sliced in 1/4 inch rounds), sauteed in olive oil with sliced onion, garlic, and the spices until slightly browned, then added the lentils and water. I served this to some friends yesterday, and everyone loved it.

Apricot Chicken I

Tasty, but VERY sweet. I made russian dressing from ketchup, mayo, and grated onion plus a dash each of worcestershire and hot sauce, and used about half apricot preserves and half orange marmalade. This is a real 1950-70's "Woman's Day" type recipe you'd remember from your childhood - not classy, but definitely comfort food - or, as one reviewer so delicately termed it, "white trash chinese food".

Angie's Dad's Best Cabbage Coleslaw

Very good recipe! It didn't get five stars because I had to make a couple of modifications - primarily, it has way too much sugar for my taste. I used about 1/3 cup sugar, and 1/2 cup white vinegar plus 1/2 cup red wine vinegar. It's still quite sweet (the red wine vinegar lends a bit of sweetness), and I would consider this the perfect cole slaw - tastes JUST like my grandmother's! Definitely gets better with age - make it at least 3-4 days ahead for maximum flavor.

Thai Chicken Cabbage Soup

This is a decent Southeast Asian cabbage soup recipe, except that it's missing one important element: FISH SAUCE! Add that, and you'll find the flavor you're missing in the original recipe. **Update: I've made this recipe a bunch of times now, and by far the best is with garlic chili sauce (in the jar with a green lid). Also, it's better without noodles - they get mushy in leftovers.
