Mexican Mole Sauce

Mini Italian Breakfast Casseroles

These were a hit as-is and were really easy to make -- as long as you plan ahead for the cooking time, it's a snap! Thanks for a great recipe. The only reason I don't give it 5 stars is that we like a little more seasoning; next time we'll add cayenne pepper (or hot sauce) or maybe some Italian herbs. Also, I only had 12-oz ramekins, so we ended up with a fairly flat serving -- a circle of ham topped with a "pancake" of egg/spinach -- which turned out PERFECTLY for serving on top of a piece of toast!

Easy Sugar Cookies

Greek Tomatoes

Two things are really great about this recipe: the simple freshness of flavors and the ease of putting it together. It's 5-stars as is (I don't count cutting the tomatoes into chunks instead of strips a variation!). For variety sometime, I could see adding a touch of mint or even some lime juice. We'll be making it a lot, methinks. Thanks for the recipe!

An easy pleaser! We omit the bananas because of preference, but love the rest! We also tried with a can of mandarin orange segments and it was delicious.

Both my egg/dairy-allergic 2-year-old son and my chocoholic husband loved these! Admittedly, we did not make as written -- a whole cup of oil sounded like too much, and the other reviews seemed to confirm that it would be. We used one reviewer's tip of 1 1/2 cups vanilla soy milk plus 1/2 cup oil instead of the oil and water. This made the density midway between cake and brownies, and they needed 38 minutes to cook fully. Oh how YUM! Next time, we'll add dairy-free chocolate chips for extra pockets of choco-goodness.

Garlic Chive Chicken

Fabulous and light! We made two changes: only 2 chicken breasts (since it was dinner for 2) and we used angel hair pasta since that was what we had. We will DEFINITELY be making this again. If you're in a pinch for time, I agree with the other reviewers -- skip the roasted garlic (which is delicious) and use minced garlic packed in oil. Thanks for a great dinner!

Chile Pork

This was tasty. The pork was deliciously tender and moist; I took the advice of other reviewers and covered my 9x13 dish. After 30 min at 225, we suddenly needed to eat sooner, so I kicked it up to 350 and it was done in 15 more min. Next time we'll make it as a filling for tacos or fajitas and somehow work some lime juice into the mix.

Creamed Chipped Beef On Toast

I was pleasantly surprised by this recipe. I'm no fan of thick gravies, or even beef for that matter, but I am a fan of quick and this dish delivered! The sauce is great with some cayenne and black pepper, and could also be a nice "blank slate" for other seasonings. We served over warmed ciabatta and it was scrumptious. Husband loved it.
