Cannellini Beans and Italian Sausage

Husband pleaser! It's quick to make with canned beans, and works as a great base for extra spices like oregano. Grilled sausage is a must! We'll definitely make it again.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Disclaimer: We had to make a few changes for our egg- and dairy-allergic four-year-old, who LOVED the end product. We used Ener-G egg replacer and a vegan vanilla cream frosting with orange extract. This cake was exceptionally moist and delicious. Our carrots did turn green, which is apparently a reaction with the baking soda, so nothing to fear. Our only minor complaint was that it was too moist/sticky to eat cupcake-style with fingers, which may be due to our necessary changes. Yay for sneaking some veggies into a preschooler's diet!

Creole Okra

Very Berry And Soy Delicious Ice Pops

I haven't made this one specifically but make something similar for my dairy-allergic son and wanted to offer a tip for those looking for something creamier: add a little coconut oil. It does *NOT* taste like coconut, so no worries there. Ice cream needs fat to get that creamy texture (notice how most ice cream recipes call for heavy cream?), and the coconut oil can bring it without affecting flavor or lactose/dairy content.

Sweet Corn Bread

Tried this recipe as the inaugural dish for our hand-me-down cast iron skillet. Other than melting a bit of bacon grease in the bottom of the skillet before pouring in the batter, we followed the recipe exactly. This is the first cornbread we have ever liked! It was even good the next day, though the bacony crust had lost its crunch. Yum!

Crazy Cake

Excellent, especially for our dairy- and egg-allergic son! Everyone loves it. We use 1 c white and 1 c brown sugar, and 2 c vanilla soymilk instead of the vanilla and water. Sometimes, just for added yummy guilt, we add non-dairy chocolate chips to the batter. Our favorite is to make it in a Bundt pan and glaze with a simple vanilla soymilk/powdered sugar icing.

Mini Italian Breakfast Casseroles

These were a hit as-is and were really easy to make -- as long as you plan ahead for the cooking time, it's a snap! Thanks for a great recipe. The only reason I don't give it 5 stars is that we like a little more seasoning; next time we'll add cayenne pepper (or hot sauce) or maybe some Italian herbs. Also, I only had 12-oz ramekins, so we ended up with a fairly flat serving -- a circle of ham topped with a "pancake" of egg/spinach -- which turned out PERFECTLY for serving on top of a piece of toast!

Greek Tomatoes

Two things are really great about this recipe: the simple freshness of flavors and the ease of putting it together. It's 5-stars as is (I don't count cutting the tomatoes into chunks instead of strips a variation!). For variety sometime, I could see adding a touch of mint or even some lime juice. We'll be making it a lot, methinks. Thanks for the recipe!

Vegan Brownies

Both my egg/dairy-allergic 2-year-old son and my chocoholic husband loved these! Admittedly, we did not make as written -- a whole cup of oil sounded like too much, and the other reviews seemed to confirm that it would be. We used one reviewer's tip of 1 1/2 cups vanilla soy milk plus 1/2 cup oil instead of the oil and water. This made the density midway between cake and brownies, and they needed 38 minutes to cook fully. Oh how YUM! Next time, we'll add dairy-free chocolate chips for extra pockets of choco-goodness.
