Bean 'N' Beef Quesadillas

this was tasty and quick. Had to substitute lemon for lime and fresh parsley for cilantro but was still good. placed a layer of grated tex mex cheese on the tortillas and then mixture or beef and beans and the another layer of cheese before placing on griddle.

Walnut Apple Dessert

My husband really liked this much better then apple crisp. Takes a bit more time but well worth it. It freezes well and I put it in 2 8x8 so I could freeze one and it was handy to take out on short notice. I used Granny smith apples and they were tender but not mushy like some others go when cooked. Good even without ice cream

Whole Wheat Ginger Snaps

Just made this today and they are great. The dough is very soft and sticky so put it in the fridge for a half hour and could have left it longer to make it easier to make the balls. They spread out on the pan so make sure you have lots of space between each one.

German Leek and Potato Soup

Love this recipe. I used chicken broth and the leftover juice from cooking the ham instead of all water. I cooked the ham bone for a longer time to make sure to be able to remove the the ham that was left on the bone and then added even some leftover ham to the soup. We prefer some chunks in our soup so I just used a hand blender to slightly puree it so the potatoes thicken it.

Beef and Wine Soup with Dumplings

I tried this this evening as I had some steak left over. I didn't have any tomato juice so I used a small can of diced tomatoes with Italian spices. I used a McCormick beef bouillon cube instead of soup again because I didn't have any soup and I used de alcoholized red wine that I got at the grocery store and it really turned out good Oh I didn't make the dumplings instead I put handful of broad noodles in

Old Fashioned Rhubarb Bread Pudding

This was GREAT. Everyone enjoyed it and it ended up being a 9x12 dish. I used 2 cans of 250ml sweetened milk which is more then a 14 oz can . I would use a bit more rhubarb and slice them 1/2 in thick instead of 1/4 in and then there would be more flavor distinction. i also used up old buns from the freezer which worked just fine.

Best Ever Rugelach

I found this recipe some time ago and sound good so tried it today but wish I had read the reviews first. Flavor was good but next time I will put them close together so that the syrup doesn't burn. I made them just as recipe suggested. Glad to hear they freeze well as can't eat them all when fresh to many for just the 2 of us
