Spinach-Stuffed Flounder with Mushrooms and Feta

Reviewed: Jun. 7, 2010
YUM, YUM, YUM! I did make a few changes. One change I made was to use lemon juice instead of water. I omitted the mushrooms because I don't like them. I also used talapia because that was all I had on hand. I served this with Feta and Greek Basil couscous and steamed broccoli. It was delish!

Avocado Quinoa Salad

Reviewed: Jun. 7, 2010
The taste was a bit bland for my liking. However with the addition of a few more spices, this would be really good!

Vegetarian Cottage Cheese Patties

Reviewed: Jan. 5, 2009
I LOVED THESE! I had read where others had trouble getting the patties to stick together. My suggestion would be to add more oats until the mixture is thicker. Then, when frying, it is important to wait until a good crust has formed on the bottom of the patty before turning it. The first patty I turned, I did too early, and I had trouble with it falling apart on me. I then waited to turn the others and had no problem. These patties were flavorful and my 18-month-old ate his portion with no complaints!

Creamy Corn Couscous

Reviewed: Jan. 5, 2009
I made this recipe for my husband, 18 month old son and myself. My husband is very picky and would prefer to eat plain chicken and either a plain potatoe or corn EVERYDAY! He initially balked at the texture, but only because he's never had couscous before. He really liked this and even got seconds! My son took one bite, looked at me and said "yummy, mama!" I'd definitley make this again. However, it really needed salt and black pepper to be more flavorful.

The Best Vegetarian Chili in the World

Reviewed: Nov. 4, 2008
This chili was really, really good! My only problem was that it wasn't soupy enough for me. So, instead of draining the beans, I added the beans with their juice. It worked alright. In the future, I'd add a bit more water to the pot. Other than that, it was excellent!

Homemade Black Bean Veggie Burgers

Reviewed: Oct. 29, 2008
I thought the patty was pretty dry once it was cooked. I'd add more onion and pepper as they'd increase the moisture level. Overall, I thought these were good, just dry.

Unstuffed Cabbage

Reviewed: Oct. 29, 2008
I loved how the bitterness of the cabbage contrasted with the sweetness of the brown sugar. I thought this dish was fantastic. I added pine nuts for an extra crunch and was very pleased. I used this as a side dish with the black bean veggie burgers made from this site. I can't wait to reheat the leftovers....

Spaghetti Squash with Pine Nuts, Sage, and Romano

Reviewed: Oct. 28, 2008
This was really good! However, I'd use A LOT less sage. I used the fresh and lessened the amount and it was still over-powering! Other than that, it was wonderful!
