Basic Crepes

Reviewed: Nov. 27, 2011
Great recipe! Followed advice in other reviews of mixing the wet ingredients together and then sifting in the flour.

Quiche

Reviewed: Jan. 23, 2011
This was awesome! I used a homemade pastry, and baked in a quiche pan. I didn't have swiss cheese, so used 1/2 cheddar, 1/2 mozzarella because that's what I had in the fridge. I also added some finely chopped onion (which I browned a little in a pan before adding to the quiche). I didn't freeze it, and it took about 45 minutes at 350 degrees. Will definitely use this recipe again - next time I'll plan ahead so I can try with swiss cheese.

Regular Crepes

Reviewed: Jan. 23, 2011
Good recipe. I added extra sugar to the batter, since I was making a dessert crepe. Definitely use a non-stick pan and then you don't need much oil (the first one I made, I used too much oil in the pan, and thought it was too greasy). I filled these with nutella and sliced bananas, and sprinkled with icing sugar.

Homesteader Cornbread

Reviewed: Jan. 2, 2011
I switched the cornmeal and flour amounts, as several people suggested. Otherwise, I followed the recipe as stated and it was very good. I used it for a cornbread stuffing recipe.

Tiramisu II

Reviewed: Dec. 5, 2010
Awesome! My first attempt at Tiramisu. I also had trouble finding the soft lady fingers, so used the crunchy ones, which worked out great. Used about 3/4 cup of instant espresso (more than the original recipe, to ensure the lady fingers softened enough). Used creme de cacao liquer, because that's what I had. Made 2 days ahead as many reviewers suggested, and it was perfect. Looks very fancy using a springform pan (lining the sides with ladyfingers). My family loved it, and I will definitely make it again.

Key Lime Pie VII

Reviewed: Jan. 18, 2010
YUM! I used a homemade graham crust. I didn't want to squeeze limes, so I used regular lime juice from a bottle (easy!). Didn't use lime zest. I baked for closer to 13 minutes - never saw any pinhole bubbles though. It set beautifully. I then did a 3 eggwhite meringue for the top. I took it to work and everyone loved it!
