Awesome and Easy Creamy Corn Casserole

Heaven on earth! Or should I say heaven in a casserole. Made for a large crowd and it was one of the first dishes to go. I don't really need another excuse to make this again. I could eat this all by itself.

Potato and Chorizo Mini Quiches

I'm giving this recipe 5 stars for several reasons. One was because it was very easy to make. I had some vegetarian chorizo in the freezer, not completely knowing what I was going to make, then I saw this recipe and thought it would make a wonderful brunch dish along with a French toast bake from this site also. I opted to use regular size cupcake pan for more of a meal. But the appetizer size would be the perfect party treat. The only ingredient I added was a little chopped onion, cooked with the chorizo and a meal we had. This recipe is extremely versatile, which added to it appeal. Try and stay close to baking times. Eggs have a tendency to dry out and become tough when over cooked.

Chicken Marsala

Smelled so good while it was cooking. Used the boneless/skinless chicken tenders, so they was no pounding involved. Used fresh sliced mushrooms. Made it with risotto, but next time I might try thickening up the sauce for pasta. Could not have been any easier to make.

Creamy Chicken Breasts

Such an easy and tastey chicken dish. Especially to make with a short time frame, minus the marinating time. I used boneless, skinless thin cut chicken breast, which I'm sure helped with the shorter marinating time. Marinated with red wine vinegrette and ceaser dressing since that is what I had on hand. Cooked on the BBQ in short time. Followed others suggestion and make more for a sauce, layered it with bow-tie pasta and made the perfect chicken meal. Super easy and very good tasting.

Super easy recipe for Sunday morning breakfast. Kids love it when I pur peanut butter in the middle of some and jam in others. I especially like lemon curd! Great little taste suprise. Ingredients are easily had at the home without shopping for anything special. Have them plain, with warmed maple sryup or dust with powered sugar (my personal favorite). Pans are not expense and Williams Sonoma sells them.

Very Chocolate Ice Cream

Absolutely the best homemade chocolate ice cream I have made to date. Easy to make, ingredients easily had and the choice of chocolates you have to put in your ice cream depending on your taste are endless. The flavor and texture are just prefect to my liking. My family insist this go in the recipe box.

Oven-Fried Chicken

Truely a good recipe. Like the buttermilk baking mix. I used chicken breast with skin and ribs. When baking it comes out very juciey. I did not have any evaporated milk so used an egg substitute instead with nice results. Give it a try I think you'll like it.

Guinataan Hito (Catfish)

Another 5 stars because my family really enjoyed how the catfish was cooked in this recipe. The only change I made was instead of using cooking oil I used butter. Just a personnel preference over cooking oil for this recipe. Not having used coconut milk for much cooking this was a delightfully light, aromatic and delicious fish recipe. I paired with a Trader Joe's Harvest Grains and frozen peas. Yum! This one is in the recipe box

No Name Orange Roughy

What a wonderful fish recipe! At first not too sure about the tomatoes, but after making this recipe doing everything with the slight exception of the wine. I only had Riesling and what a taste. Paired this with bow tie pasta because of the tomatoes and it was a perfect mate. Go ahead give it a try. I think you'll like it.

Salmon with Brown Sugar and Bourbon Glaze

Truely wonderful, easy, delicious salmon recipe. I made it exactly as stated. Just added chopped pecans to the sauce after cooking the fish as a topping. Placed on a bed of cooked brussel sprout salad (check out the photo). Makes a nice contrast to the sweetness of the fish and sauce. This is good enough for my next dinner party!

Turkish Red Lentil Soup with Mint

I highly recommend this extremely healthy, hearty, and delicious soup. Make exactly as stated. If you are sensitive to spicy food watch the amount of Cayenne and Parika you use. We like the kick so no changes here! This filling soup is perfect to warm you on a cold day.

Barbecued Beef

I loved the ease and the unique taste of this Barbecued Beef recipe. Slow cooking a chuck roast for the alotted time was tender and shredded just right for our sandwiches. Tangy, moist and alittle messey made this a hit for halftime football parties. The only change was braising the chuck on the grill before slow cooking.

Asian Chicken Salad

5 stars for the dressing! Make sure to use the sesame oil, it really helps to make the dressing just perfect. YI used the Grilled Chinese Chicken salad recipe on this site to grill the chicken. Much more flavorful than plain chicken. But that's just my preference, and no extra trouble to enhance the flavor of the chicken to go with this salad. Added mandarin oranges, toasted sesame seeds, and sliced almonds. All together it was a wonderful salad for a too hot to cook evening!

Lemon Sauce for Salmon Patties

A prefect mild lemon flavored sauce for the Oregon Salmon Patties. Not over powering at all. Made as stated, but could kick it up a notch with alittle more cayenne if you prefer.

Wonderful Gluten Free White Bread

This gluten free recipe for white bread is simply delicious. This was the first "yeast" recipe for gluten free bread that I have made. Found it to be simple and straight forward. The only change was using brown rice flour since I had no white rice flour. I stronly suggest the use of a stand mixer with the bread blade since gluten free dough is much more sticky than traditional yeast bread doughs. The bread holds up very well for sandwiches and makes a wonderful toast for breakfast. I like very much!
