Donut Muffins

These little gem of a donut were delicious! I was a little concerned about the amount of nutmeg , like some other reviewers, but once they were baked, sugared and ate, my concerns were no more. I used my little Bellini mini donut maker and they turned out perfect. Next time I might baked for just a little longer to make the outside a little more crunchy, but these were very tastey.

Teriyaki Marinade

Mild teriyaki taste. Next time I'll marinade longer than a couple of hours. I used turkey tenderloins. Skuwered them with veggies, bbq...and no left overs!

Pesto Chicken Penne Casserole

I made this for a crowd. Easy to make for a crowd, which is what I was going for. Went over well, but somewhat a little cheesy for me. I would prefer it to be creamy.

Awesome and Easy Creamy Corn Casserole

Heaven on earth! Or should I say heaven in a casserole. Made for a large crowd and it was one of the first dishes to go. I don't really need another excuse to make this again. I could eat this all by itself.

Slow-Cooker Chicken Tortilla Soup

Not quite sure why I didn't much care for this recipe,but I'll try. I followed the recipe true, with the only change in chicken broth. Instead of using 2 cups of water I used chicken broth in addition to the chicken broth it asked for. I think it was a little too watery. I like my soup on the thicker side,but ok. Maybe next time I'll forgo the 2 cups of water. Maybe the brand of enchilada sauce was wrong. I should try a different brand. It has lots of flavor. Maybe a bit too spicy for my family, but that's typical. I added chicken that was bbq for added flavor. Even tried eating this the next day to help with the flavors, but to know avail. I'm not sure I'll try this recipe again.

Turkey and Quinoa Meatloaf

Such a nice recipe! The quinoa added a very nice texture to the ground turkey. I was a little afraid of the hot sauce, not for me, I love spice. But for my family of sensitive taste buds. What a really pleasant surprise. Just the right amount of spice. This recipe is very flavorful. I can definitely recommend.

Asian Chicken Salad

5 stars for the dressing! Make sure to use the sesame oil, it really helps to make the dressing just perfect. YI used the Grilled Chinese Chicken salad recipe on this site to grill the chicken. Much more flavorful than plain chicken. But that's just my preference, and no extra trouble to enhance the flavor of the chicken to go with this salad. Added mandarin oranges, toasted sesame seeds, and sliced almonds. All together it was a wonderful salad for a too hot to cook evening!

Potato and Chorizo Mini Quiches

I'm giving this recipe 5 stars for several reasons. One was because it was very easy to make. I had some vegetarian chorizo in the freezer, not completely knowing what I was going to make, then I saw this recipe and thought it would make a wonderful brunch dish along with a French toast bake from this site also. I opted to use regular size cupcake pan for more of a meal. But the appetizer size would be the perfect party treat. The only ingredient I added was a little chopped onion, cooked with the chorizo and a meal we had. This recipe is extremely versatile, which added to it appeal. Try and stay close to baking times. Eggs have a tendency to dry out and become tough when over cooked.

Coconut Cream Pie

Easy "homemade" coconut cream pie. Had all ingredients on hand. Made a homemade pie crust only because I was too lazy to go to the store and buy one. Another easy recipe off this wonderful site. Next time I'll use a double boiler for the cream pie mixture cause my stove, even on low has a tendency to run a little too hot, so I had to continue to watch for burning as I stirred. One little trick I use when pre-baking the pie crust is after the first bake I brush egg white mixed with a little water onto the baked pie crust. Put it back into the oven just long enough to dry the egg mixture. Doing this keeps the cream pie from seeping into the crust and making it soggy. That's only if it's not eaten quickly!

Barbecued Beef

I loved the ease and the unique taste of this Barbecued Beef recipe. Slow cooking a chuck roast for the alotted time was tender and shredded just right for our sandwiches. Tangy, moist and alittle messey made this a hit for halftime football parties. The only change was braising the chuck on the grill before slow cooking.

Lemon Sauce for Salmon Patties

A prefect mild lemon flavored sauce for the Oregon Salmon Patties. Not over powering at all. Made as stated, but could kick it up a notch with alittle more cayenne if you prefer.

Apple Cider Chicken Marinade

Very nice marinade for chicken, could very well use for pork also. Ingredients were all on hand with the exception of some of the herbs. Had to use dried rosemary and thyme. Used boneless skinless breast. I let it marinade for about 6 hours, grilled them on the bbq and it was delicious. With the leftovers I'm going to have a very nice chicken salad for lunch!
