Maple-Soy Glazed Salmon

Reviewed: Aug. 19, 2012
Delicious! Made this tonight, I had never cooked on a cedar plank before. Wonderful flavour. The maple was understated, but you knew it was there. Definitely will do again.

Strawberry Pavlova

Reviewed: May 4, 2015
This was delicious!.. I have some friends that don't eat wheat, so this fit the bill nicely. I did make a change from whipped cream for my lactose intolerants, by taking 0% fat, lactose free, Greek Yoghurt, using about 1/4 c of powdered sugar and the 2 tbsp of Cointreau. Got great raves on this.

Individual Beef Wellingtons

Reviewed: Nov. 8, 2014
Delicious. I used red wine as I did not have the sherry, but it worked well. I am planning to try the recipe using phyllo pastry. Will report back on that one as well.

Roast Leg of Lamb with Rosemary

Reviewed: Mar. 18, 2014
I made this tonight. Delicious. Served roast potatoes, peas and mint jelly on the side. The roast worked out perfectly, but I also used a meat thermometer.

French Breakfast Muffins

One of my favourite muffins, no question. Somewhat like a doughnut with the nutmeg and sugar. Always popular when I make these. YUM!

Creamy Au Gratin Potatoes

Reviewed: Mar. 10, 2013
I made one change....microwaved the au gratin for 14 minutes then put in the oven for 45. This is very good and now will be my staple for potato scallop.

Delicious as is, I used this evening on the grill with boneless and skinless breasts as well as drumsticks. This mixture is a keeper.

Simple Salmon Chowder II

Reviewed: Mar. 4, 2014
As a lot of us do, I also altered the recipe. I didn't have green onions, but used yellow ones instead. As well, I used fresh potatoes, omitted the corn and also substituted cream rather than the evaporated milk. I will be making this one again.

Baked Brie with Mushrooms and Almonds

Reviewed: Mar. 31, 2013
Like a lot of people, I made a couple of changes. I did not have almonds on hand....subsituted walnuts. Nor did I have any brandy...skipped it altogether. What I ended with was a savoury melted brie with mushrooms, and the nuts, was wonderful for our Sunday lunch served with Port. Life is good.

Beef Roast in Red Wine (Carni Arrosto al Vino Rosso)

Reviewed: Nov. 5, 2012
The combinations of the spices with onions, garlic and tomatoes was wonderful. The red wine made a really great gravy. I cooked my roast in the oven until it reached the rare stage. I will definitely do this over!

Garlic Herb Grilled Pork Tenderloin

Reviewed: Jun. 24, 2015
I found this to be easy to prepare, and was delicious. Kept an eye on it as it was cooking with a meat thermometer....My tenderloin was not so large but only required about 20-15 minutes to reach the 145o. Very tender, wonderful selection of herbs. I can see this becoming a basis for other herb variations.

Baked Salmon Fillets Dijon

Reviewed: Nov. 17, 2012
This was a good recipe, however, I do prefer the maple soy recipe more. This did provide a good change to the regular format of salmon...but how can you not like salmon?

BBQ Spice Rub

Reviewed: Apr. 21, 2015
Really great change from the sugar laden sauces. I found that there was a slight sweetness, but overall nice and spicy. Will use again and perhaps finish my chicken with a bit of honey drizzled over prior to serving.

I made this dough in my bread machine, then cooked it on my grill. The bread is good but a little sweet for my taste, I will cut the sugar back the next time I make it.

Canned Apple Pie Filling

Reviewed: Sep. 29, 2013
While I have not made a pie with this filling to date, I did just prepare the filling. You do need to be careful of the level the jars are filled, and I found that the sauce took quite a while to heat up and thicken....use some short cuts if you can.I did increase the cinnamon and nutmeg to the level I would use for a single pie, as well as substituted some brown sugar for white.(1 1/2 c) Looking forward to trying a pie now.
