Roast Leg of Lamb with Rosemary

I made this tonight. Delicious. Served roast potatoes, peas and mint jelly on the side. The roast worked out perfectly, but I also used a meat thermometer.

Simple Salmon Chowder II

As a lot of us do, I also altered the recipe. I didn't have green onions, but used yellow ones instead. As well, I used fresh potatoes, omitted the corn and also substituted cream rather than the evaporated milk. I will be making this one again.

Canned Apple Pie Filling

While I have not made a pie with this filling to date, I did just prepare the filling. You do need to be careful of the level the jars are filled, and I found that the sauce took quite a while to heat up and thicken....use some short cuts if you can.I did increase the cinnamon and nutmeg to the level I would use for a single pie, as well as substituted some brown sugar for white.(1 1/2 c) Looking forward to trying a pie now.

I made this dough in my bread machine, then cooked it on my grill. The bread is good but a little sweet for my taste, I will cut the sugar back the next time I make it.

Baked Brie with Mushrooms and Almonds

Like a lot of people, I made a couple of changes. I did not have almonds on hand....subsituted walnuts. Nor did I have any brandy...skipped it altogether. What I ended with was a savoury melted brie with mushrooms, and the nuts, was wonderful for our Sunday lunch served with Port. Life is good.

Creamy Au Gratin Potatoes

I made one change....microwaved the au gratin for 14 minutes then put in the oven for 45. This is very good and now will be my staple for potato scallop.

Pork Roast With The World's Best Pork Loin Rub

Baked Salmon Fillets Dijon

This was a good recipe, however, I do prefer the maple soy recipe more. This did provide a good change to the regular format of salmon...but how can you not like salmon?

Beef Roast in Red Wine (Carni Arrosto al Vino Rosso)

The combinations of the spices with onions, garlic and tomatoes was wonderful. The red wine made a really great gravy. I cooked my roast in the oven until it reached the rare stage. I will definitely do this over!

Delicious! Made this tonight, I had never cooked on a cedar plank before. Wonderful flavour. The maple was understated, but you knew it was there. Definitely will do again.
