Zucchini Bars

I was simply looking for creative ways to use up zucchini when I found this wonderful recipe. I did substitute Egg Beaters for the eggs. I removed it from the oven as soon as the toothpick came out cleanly. This was so moist and delicious. My husband is not a dessert eater, and he liked this. My daughters, who scoffed at the idea of zucchini in cake, had seconds. A simple yet delicious dessert.

Flourless Peanut Butter Cookies

These are the best pb cookies we've ever had. They were the first solo baking project for my 8 year old daughter. She did not alter the recipe. She put her fork in Splenda to get the criss cross. Baked on parchment. Let the cookies cool a minute on the sheet before removing to rack. They aren't quite so fragile then.

Make Ahead Lunch Wraps

An awesome lunch for a busy mom. The prep took time, but I individually wrapped them and froze them. Then I took them to work in my lunch and microwaved at work! A great, healthy change of pace from the typical sandwich. Nice vegetarian alternative. Thanks

Roast Chicken with Rosemary

Great and very easy. I also did this adding, in addition to the onion and rosemary, fresh thyme springs, 6 cloves of garlic, and half a lemon. Great the original way, or with the extra additions.

Pumpkin Cream Cheese Muffins

Wow! These turned out great! After reading the reviews I experimented. With the first batch, I tried to make sure the filling was surrounded/hidden in the batter, to make sure it come out as "filling". The second batch, I created a little "well" in the middle of the batter & put in a dollop of filling, so it was still visible. Then I sprinkled the crumb topping on top of that. This latter batch was so much better. The cream cheese was not "filling", but a layer of cream cheese all over the top of the muffin (with the crumb topping on top of that. It made the cream cheese much more enjoyable, almost like frosting to a cupcake. I wish I had done them all like that. The recipe, as is, made 21 muffins, but I did fall short on crumb topping. I'd double that next time. I will definitely do this recipe again. This was awesome!

Low-Fat Blueberry Bran Muffins

These muffins were great. I did the recipe as is with the exception of using Eggbeaters instead of egg, and I added 1/2 cup of chopped walnuts for some added texture/crunch. These were a hearty and healthy snack. We'll make these again. Thanks!
