Portobello Mushroom Stroganoff

Love this vegetarian version of stroganoff! My husband loved it to and I will for sure be making this again. I did the same changes that I'd seen in the reviews. I added a clove of garlic, cut the sour cream down to half a cup (and it was still plenty rich and cream), along with cutting the flour to about 2.5 tbsp. Then added 1 tsp soy sauce and 1/2 Worcestershire. The only reason I didn't give it 5 stars is because the original recipe needed tweaking.

Mango Lassi II

My family really enjoyed this however a little too much yogurt. I did half yogurt and half coconut milk and then some agave to taste. The mangoes I had really made this amazing. Having a delicious mango is key!

Chicken Florentine Rice Casserole

Very good recipe. I used real brown rice and a huge handful of fresh spinach and it was great. I think I'd like to try this with broccoli too.

Refried Beans Without the Refry

A little salty so I'll hold back a little next time, but love it as is. Easy to do and not a lot of work, which is a huge plus! I just threw out what was left of the onion after it was done cooking. I will NEVER buy canned refried beans again.

Potato Soup with a Kick

I really enjoyed this. It has ingredients that I usually have on hand so it's super easy to throw together on those crazy day. Loved the spicy kick. I gave it 4 stars because my husband wasn't as crazy about it as I was, but he still thought it was good.

Quick and Easy Chicken Noodle Soup

This is so easy and delicious! Nice that it's not completely from scratch but still homemade so it nothing like a can. Great for mom's who don't have time to spend all day making a completely from scratch soup. I used bouillon cubes instead of canned broth and it was great. Loved this during the cold winter months.

Restaurant Style Chicken Nachos

My husband LOVED these nachos. The first time i cubed the chicken rather than shredded, and then shredded the next time and it was so much better. I also added black beans, olives and jalapenos. I also made my own taco seasoning mix which is so much better than the package. With a little sour cream and guacamole on top it was better than a restaurant in my opinion. Cheaper too!

Sour Cream Burgers

I really enjoyed this. Great because I always have these items on hand so I can easily make this when I don't know what to do for dinner. Great alternative to a plain burger with lots of flavor. Not a huge fan of beef burgers but this was great. I used extra lean ground beef and light sour cream with whole wheat buns to making it a little healthier. Usually the extra lean meat isn't as good for burger making but the ingredients added to it make it more tender and juicy.
