Country Chicken Casserole

This was definitely a hit at my house. I didn't have any french fried onions on hand so I just omitted that. I also used a little more hash browns as I had one of the carton ones and needed to use it all. Next time I will add one more can of soup.

Quick and Easy Chicken Noodle Soup

Oh my goodness this soup is wonderful!!! My whole family raved about how good it was and it was very easy!!!! I followed the recipe exactly except for adding the noodles...I cooked them seperate then added. Next time I am doubling the recipe so I can freeze half.

Philly Cheesesteak Sandwich with Garlic Mayo

My family loved these...the only thing I didnt like was the bread I bought for them but had nothing to do with this recipe. I also bought garlic and herb mayo to use and used provolone cheese. For the meat I used flank steak since that is what I had on hand. This will be a keeper for us!!!

Simple Taco Soup

Yum!!! This is the exact recipe my mother in law uses and it is delicious. I use diced tomatoes instead of the stewed ones and I omit the chili beans and just use pinto beans or Ranch Style beans.

Best Spanish Rice

Very good...my husband said it taste like authentic mexican cooking :) I did substitue brown rice for the white rice and had to cook the dish for about an hour and I also chopped up some red and oragne bell peppers and sauted with the onion. I will NEVER buy a boxed spanish rice again!!! Thanks for a great easy recipe.

Irish Chicken and Dumplings

This was so good!!! I couldnt stop going back for more. I did not follow the directions on how to cook it excatly but I did use all the ingredients called for minus the celery. This is a great variation on chicken and dumplings to get some veggies in...kinda like chicken and dumplings meet chicken pot pie...yum!!!

Not one of my favorite chicken recipes. It was a little soggy for my liking. May be better using Panko bread crumbs though with Italian seasoning added to it.

Chicken or Turkey Tetrazzini

I almost followed the directions to the T but I scaled it down for 4 servings so I only used 1 can of cream of mushroom soup and instead of the shredded cheese I used half a can of Campbells Cheddar Cheese soup and I omitted the red bell pepper and parsley just because I didnt have any on hand. I added some panko bread crumbs and grated parmasean cheese for the last few minutes of cooking. All in all I thought it was a good recipe but mine came out a little dry so next time I wont cook it for so long or I will add a little more soup or chicken broth. My husband LOVED it thoght :)

Flatlander Chili

I cooked this last week and it was a huge hit. I scaled it down and still froze some of it for a later date. However I did make changes. I sauted my onions and garlic in EVOO then threw in crockpot. I then browned my hamburger meat, drained, and put in crockpot. I used a vegetable juice instead of tomato juice and I chopped up about 4 Roma tomatoes and 1/4 of a jalapeno and sauted in EVOO. I cooked up some dried pinto beans to use instead of can beans. I did not make any chages to the seasonings. I put everything in the crockpot and cooked on high for about 3 hrs then turned to low for about 2 hrs. The leftovers were even better!! This is my new chili recipe.
