Colleen's Slow Cooker Jambalaya

The only ingredient I omitted was the cayenne. I wanted to be careful with the raw chicken, so I set the slow cooker on high and added the tomatoes and broth, then the vegetables, and sausage. By the time those were all cut up, the mixture was hot and I added the chicken. Cooked on high for two hours, then turned it to low for another two. Simply the best! My husband raved about it.

Yam and Apple Casserole

Use GALA apples - they are the best. I used apple cider and nutmeg instead of allspice. Very easy! Can make this a day ahead by poaching the apples in the cider mixture first, then refrigerate.

Best Spanish Rice

Italian Style Sausage

I also substituted fennel seed for the anise seed (used 1 tsp because we like fennel). Left out the salt entirely, and used ground turkey. Very good!
