Maple Kale Crisps

Reviewed: Feb. 1, 2014
I replaced the olive oil with coconut oil and the kale chips were so good. Next time, I might reduce the salt to 1/2 tsp.

Healthier Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 3, 2013
Fantastic recipe. I took the recommendations of others and put the chicken breasts (frozen) into the slow cooker. I then cooked it all on high for 6 hours. When it was done, I shredded the chicken while it was still in the cooker. I also replaced the banana peppers with a 4 oz. can of diced green chilies and added a 15 oz can of drained/rinsed black beans to the mix. As others have mentioned, this makes a great meal when served over 1/2 cup of brown rice. I will be making this again!

Donut Muffins

Reviewed: Jun. 17, 2012
Made these as part of my husband's breakfast in bed for Father's Day. The kids and I had a few before serving them ;) They were great! Even though it's tempting, don't overmix the batter! You'll have a lighter donut muffin that way.

Mouse's Macaroni and Cheese

Reviewed: Nov. 28, 2011
Excellent recipe! In place of the American cheese, I used a shredded four-cheese blend (which included American cheese), that another reviewer recommended. I also topped the mac and cheese with slices of bacon instead of bread crumbs, before baking it. The bacon gave it a nice smoky flavor. I'll be making this again!

Sausage, Kale, and White Bean Soup

Reviewed: Nov. 3, 2010
Sooooooo yummy! Linguica is hard to come by in the South, so I used turkey kielbasa instead (Trader J's). I used canned beans (with liquid) and added more chicken broth (3 cans).

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 10, 2010
Perfect meal to make on a Sunday, so dinner is ready during the week. I'm interested to know if anyone has tried freezing the leftovers. I'm making this dish today and I'm thinking of freezing half of it.

Newport Clam Chowder

Reviewed: Jul. 14, 2010
Having grown up in New England, I've tried a lot of chowders. This recipe is excellent! I crisped up 3 slices of chopped bacon and cooked the onion in the bacon fat instead. I added the cooked bacon back into the chowder at the end. Don't skip the fresh dill weed, it totally makes the dish!

Awesome Slow Cooker Pot Roast

Reviewed: Apr. 4, 2010
At the recommedation of another reviewer, I coated the roast with flour and then sprinkled some dried rosemary and garlic salt on both sides. I seared it on all sides in a little bit of olive oil. I replaced the water with a can of beef broth and added 1/4 c red wine (recommended by another reviewer). I also added 10 oz fresh mushrooms to the crock pot (sliced in half). The gravy was unbelievable! I served the pot roast with mashed potatoes, the gravy and roasted veggies. An amazing and easy dish to make!!!

Brownie Biscotti

Reviewed: Nov. 8, 2008
Great recipe! I turned the oven down to 325 for the second baking because I was afraid 375 was too high. The biscotti dried out perfectly with no burning.
