About this Cook
I am Portuguese, born in the Islands of the Azores, I have lived in Quebec, Canada most of my life and speak several languages (of course French being one of them). I am an Interior Designer and Decorator now for two years, I quite my office job to go back to school and follow my true passion 3 years ago. At the ripe age of 45 and I couldn't be more happy with my life now. I am married to a wonderful French man who supports me true thick and thin, and I have two equally wonderful children. I love to socialize and meet new people; people are my inspiration to new ideas, trends and I would like to think that I inspire many people as well. I always have a postive out look in life and I enjoy a good party with friends and family.
My favorite things to cook
I love to experiment with new recipes but I am limited with my 10 year old daughter who is a little fussy. I enjoy cooking French, Italian and Portugues cusine. I also enjoy Asian cooking very much but my daughter isn't crazy about them all, unless it is a stir-fry. I always eat healthy foods with fresh ingredients.
My favorite family cooking traditions
My family enjoys Raclette ( this site if you don't know what raclette is (I know you will love it). My family also loves our saturday day night dinners which is always different, but mostly they enjoy my Pork Loin maple syrup and Dijon sauce. I also enjoy Tapas, one of our favorites are smoked salmon with capers. We also love portugues cod fish with potatoes casserol. Salmon with a holandaise sauce and shrimps. BBQ fresh vegtables with olive oil and herb de provence. Our traditions isn't just one recipe, the tradition is that we all eat together at all times no matter what day of the year. Afer all a family that eats together bonds together.
My cooking triumphs
Beef Wellington is one of my favorite dishes and I don't even like beef all that much. It looks rich and tastes fabulous. I make great sushi of all kinds, I am the one who has to make the sushi for every get together at friends and family. I love making great salads, I love the combination of mixed greens with sesonal fruits and sauted pecans or walnuts with maple syrup and a little butter to top it (wonderful).
My cooking tragedies
I am not an accomplished baker, so I tend to stick to Betty Crocker and have created amazing cakes with them by altering their ingredients. I once made chocolate chip cookings that were hard as rock. I have to watch my weight so whenever I make a cake, I could never eat it, so maybe that is why I fail at baking.

Butternut Squash Soup
I used potatoes instead of cream cheese (don't like cream cheese), then purée the soup, it was great without the processed cream cheese. Didn't change anything else. I am giving it three stars because I tweaked it.

Strawberry Cream Roll
First off, I made the cake as written, was great. Second time, I modified with low fat lemon pudding with lemon zest and folded in whipped cream. It was really good. I think next time I will use chocolate pudding. Thanks for the recipe.

Potato Casserole
I have been making this recipe for years, it is a must have at all family gatherings. I have made it Many different ways over the years. My favourite is hash brown with onion flavour, I like to use one can of low fat cream of celery and mushroom. I add plain Greek yogurt instead of sour cream and a little low fat milk. I use old cheddar to give it extra cheese flavour, and for topping I add more cheese along with Italian bread crumbs. If I do add onions, I sauté them until they are tender and add it to the mix along with fresh garlic. This recipe can be modified in so many is a keeper in my family.
