Sweet Potato Gnocchi

World's Best Scones! From Scotland to the Savoy to the U.S.

The grating of the butter is the Key! These scones are amazing. I substituted fresh blueberries for the raisins and that was perfect.

Mashed Sweet Potatoes

I gave this five stars but I also changed quite a lot of things about it. So many things that it was almost a different recipe. I first sauteed in butter a few shallots (about 3/4 cups roughly chopped) and one peeled and chopped green apple. I added pepper and nutmeg to this. I followed the rest of the recipe separately and I stuck to almost exactly (although I did use a little less maple syrup) and I roughly mashed the potatoes so they would still be a little chunky. Then I mixed in my apple and shallot mixture. Because the shallots are much more mild than onions, it compliments the sweetness of the syrup perfectly. I paired it with smoked porkchops (topped with the same apple/shallot mixture - with some brown sugar added - which comes out like a warm chutney). It was an excellent meal and my roommates still talk about it even though I made it months ago.

Sunny Pepper Parmesan Rice with Spinach

I just made this with some parmesan breaded tilapia and it was great! I used followed the recipe very close except I used brown rice and I used frozen spinach like some of the other reviewers. Using brown rice makes this a very healthy side dish and paired with fish you have an excellent and nutritious meal. My roommates both liked it a lot too!

Southern Squash Casserole

This casserole was so good! It was sweet and savory all at once and was a huge hit with my family. One criticism is that I have never cooked fresh squash before and it took me FOREVER to thinly slice it for the recipe. I later realized that if I had just cooked the squash in the oven for even ten or fifteen minutes, this recipe would have been so much faster! Also, I used butternut squash and acorn squash. The butternut worked better.
