Love love love to cook. I never follow recipes step by step. I do my own thing. This year i am trying to take all my old favorites & make them healthy!!!! wish me luck!! To me allrecipes is like my brian storm jump off, i come here to find out what i want to make, get some ideas & then add my 2 cents.
My favorite things to cook
I like cooking all the things i ate as a kid. Old shcool mexican food enchiladas with tons of cheese, hard shell tacos, mexican rice etc...Italian food is a tad simialr and i love making pasta!!! Recently i have fallen in love with asian food & tofu. In the spirit of eating healthy i have adopted a lot of asian recipes.
My favorite family cooking traditions
In the mexican fam tradition i adopted the use of way too much cheese, sour cream salt & tortillas!!!! All these things make for a very filling meal :(
My cooking triumphs
Using a lot more veggies, lean meats, less fat basically. Trying to make lower calorie meals. As the cook in the fam i have to make sure i keep everyone healthy :) I figure i cant make them workout so the best i can do is make them a healthy meal!!
My cooking tragedies
Im very lucky i have not had too many tragedies. Im pretty good at cooking. I always do my homework before i do anything. It might take sometime but it help from messing anything up.I love watching Good Eats, he really breakes everything down so you know what your doing & why your doing it. I did burn some spare ribs on the bbq once & made some cornish hens that were raw when they hit the table( i stuck them back in the oven) not biggie. what can i say im good :)

Swimming Angels
Made this for dinner. Took the advise of most and cut down on the peanut butter, because of this adjustment I had to add cornstarch to thicken up the sauce. I followed the tofu and spinach directions but next time I may take the suggestion to bake it. I would of liked a firm texture. Over all I thought this was a great dish to make when u need to mix up the usual weekday dinner schedule. I will say it is a tasty dish !!!

Creamy Hollandaise Sauce
Too much lemon. This recipe called for 3 tablespoons of lemon......use one or two unless u really like your sauce tart. Otherwise the recipe was great and I will never buy store bought hollandaise again. I gave this 4 stars because its a great starter recipe.

Tofu Creamed Spinach
Good recipe. Fairly easy. When i was done i put it in the oven. Keep it warn and further melted the cheese. No seconds, its a very rich side.
