Super-Delicious Zuppa Toscana

FABULOUS!!! i have looked for a while for an at home version of my favorite "italian restaurant" soup and now i have it! i also used hot sausage, patted the excess fat off, used a little pepper flake and used kale. i love the way the dull kale turns bright green in the soup! absolutely amazing!

Party Chicken I

I would give this 5 stars, my husband however was not a fan of the "heaviness" but I'm German and loved it! For my husband instead of wrapping the chicken in bacon, I cut a pocket into the side of the breast and stuffed it with bacon bits and swiss cheese. A wonderful addition!

Bierock Casserole

Wow thanks! MY grandma used to make Bierocks for us when we were kids but I am seldom in the mood to make the dough and assemble them! This tastes just as good, is MUCH less mess and makes a bigger batch! I did season my beef with my favorite steak seasoning and garlic pepper but not too much. I wanted to make sure the sauerkraut shined through. I drained my sauerkraut but did not rinse it, I LOVE the taste of sauerkraut! This one is a keeper!

Reuben Casserole

Wow! If I could give more than 5* I would!! When I took the leftovers to work for lunch the next day, people followed me around sniffing my lunch and begging for the recipe!! Since my favorite part of the sandwich is the corned beef and sauerkraut, I put a layer of 1/2 the corned beef, then layer 1/2 the kraut, then repeat so they really get mixed together. I also spray my rye cubed with butter spray so they crisp up with some flavor! What an awesome recipe!!! I'm going to try it next in the crock pot for easy ready to eat dinner when I get home!

Cabbage Roll Casserole

I also make this in my crock pot so I come home to to the fabulous taste of Cabbage Rolls with minimal work! I add an additional can of tomato sauce, use 1 can of chix broth and 1 can beef and also add a splash of white wine (the taste is amazing and of course the alcohol cooks off). And of course I add garlic to everything! A fabulously easy meal!

Creamy Swiss Chicken

Fabulous! I always double up on the cheese cuz I LOVE Swiss cheese and season the chicken with salt and garlic pepper. I don't keep croutons around so I use a box of Whole Wheat or Cornbread stuffing (which i always have around) and it really makes the meal pop!

Barbecue Macaroni Beef

I added the veggies when I browned the meat so they cooked a little. I also threw in some pulled pork I had leftover and for me it made the meal. Still ended up only using 1 bottle of barbecue sauce though, 2 would be awfully soupy. But overall an interesting twist on Beefy Mac!

Cuban Ropa Vieja

This dish could not be easier to achieve truly Cuban paradise! I fell in love with this dish when visiting my sister down south but could not find a substitute up north! I am SO glad to find this easy recipe! i also upped the garlic and onions (love em!) and the result was fabulous! Even my "meat and potatoes" fiance had seconds and thirds!

Creamy Cordon Bleu Bake

This is a fabulous recipe! I made a few changes. Instead of cream of celery, I used sour cream and mixed with the cream of chicken soup. This cut down on salt and added a little zip. I also added frozen peas and carrots and served it over rotini! The whole crowd raved!
