This cake is excellent with the changes suggested by other reviewers (replace some oil with applesauce, use 1c white sugar and 1c brown sugar), which is why I give it 4 stars instead of 5. I made it into a layer cake using 8 inch round pans and it came out very nicely. It was very moist and had a great flavor. It got lots of compliments at Easter.

Cream Cheese Frosting II

I made this frosting to go with the Carrot Cake II recipe on this site. The taste of the frosting was excellent. Very cream cheese-y. However, it was very thin and didn't hold up too well on my layer cake. I had to chill it in the fridge before icing and then chill it afterward as well. This icing would be better on a bar type cake or cookies, it's not great for layer cakes. Great flavor though!

Cheesy Apple and Oat Meatloaf

I thought this was only ok. I loved the idea of it and was really excited to make it, but it just turned out ok. It was neither cheesy nor apple-y. I couldn't really taste any apples or cheese. It made a nice, moist meatloaf, but there were no interesting flavors that I had hoped for.

Flourless Peanut Butter Cookies

Quite possibly the best peanut butter cookie ever! Very peanut buttery and delicious. I did use a some other reviewers' suggestion and added 1 tsp of vanilla extract. They are extra delicious right out of the oven too - they just fall apart, but who cares!!! If you don't want them to fall apart when you eat them, be sure to cool for about 5-10 minutes.

Alyson's Broccoli Salad

Excellent salad! I get tons of compliments on this salad. I make it with a few minor changes - I use 3 heads of broccoli instead of one, otherwise it's really runny, and I use dried cranberries instead of raisins.
