Summer Corn Salad

Had only 4 large corn on the cob but I followed the recipe exactly only changed the amount of onion because I only had 1/2 red onion left, and WOW! Incredible side dish to the burgers we had. Everyone loved it.

Grilled Peanut Butter and Jelly Sandwich

Just made it for lunch...yummy! Thank you what a great idea, grill a classic. I did spread the peanut butter on both slices and put the jam in the middle. Perfect even for an adult!

Chicken Marsala

Great recipe and easy to make. Everyone in the family loves it even the kids. Only thing I do different is double the Marsala & sherry for the sauce so we can drizzle it on whatever side we make with it like mash potatoes or spaghetti. At times I also use fresh oregano because I just have so much in my garden.

Chocolate Applesauce Cake

Really good cake...and very moist. Followed it exactly except for the topping, I didn't have pecans so I substituted 1/4 c sliced almonds and 1/4 c. walnuts. Also changed the 2 tbs sugar for 2 tbs cinnamon-sugar spice. Yummy! I really like it with the sliced almonds and when I make it again I'll just add those. I used homemade apple sauce, which I think was sweetened, had me worried at first but luckily the cake wasn't too sweet. Lets see what others think once they have some.

Chicken Hurry

So easy and good! I used 6 drumsticks (removed the skin) and followed the recipe, just had to add a splash of white wine to it and cut back on the water. I also followed what others recommended with adding half an onion sliced thin to the bottom of the dish. Doesn't taste exactly like a BBQ sauce but boy is it good! You have to try this!

Maria's Portuguese Bacalau

I made this for my parents who are both from Lisbon, Portugal...and boy did I impress them! Thank you so much! As another reviewer mentioned, my parents said this dish is traditionally called Bacalhau à Gomes de Sá. This is a keeper and I'll be making years to come, especially for family gatherings. Thank you again!

Grilled Marinated Swordfish

I've been making this dish for some time now and I can't believe I haven't reviewed it yet. It is sooo good. Personally its the best swordfish recipe I've found. I try others but they just don't measure up. This is a family favorite. And another bonus: so easy to make! Thanks for the recipe.

Baked Ziti I

Love this recipe! I've made it over a dozen times now but haven't added the meat to it yet (but I hope to in the future) because some family members don't eat meat. I also don't layer it but mix it all up, not sure if that makes much of a difference. But I do add chopped mushrooms to the sauce. Easy to make and so good! Thanks for the recipe.

Shrimp, Leek and Spinach Risotto

Wonderful recipe and has become a family weekend favorite. Risotto is just a bit time consuming for me. I've made this recipe quit a few times now and play around with the ingredients depending on what I have available especially the scallops. (My husband loves them and I'm not a big fan so I never mind if their missing). I do always add more broth than what is asked for because it doesn't come out right with just 4 cups. I think a 3 to 1 ratio works better. You must give this recipe a try! Its really good!

Ray's Chicken

Great chicken marinade!! Used it on chicken breasts and then made a grilled chicken wrap. It didn't need any dressing/sauces just added some lettuce, shredded carrots and onions...simply delicious! None of the flavors were overwhelming, they just somehow work perfectly together. I wouldn't change a thing. Going to use the left overs for quesadillas tonight. Thank you for the recipe.

Blushing Cranberry Pears

Really lovely recipe. I love the flavor the cinnamon stick gives to it. And it smells really good. After it cooled the juice left the pretty "blush" on the pears. I was really impressed. When I make it for dinner guests, I might try to thicken the sauce to serve it as a garnish to the pears and follow the advice of others by cutting the bottom so it can stand up making a pretty display. But today there were no frills and we all enjoyed it.

Tender Potato Biscuits

First time I've made biscuits and it won't be the last. These were soooo good!! I can't think of a better way to use up left over mash potatoes. My mash potatoes had garlic and herbs so I didn't find these biscuits too sweet like the other reviews but I also added a bit of parm cheese.

Italian Anisette Cookies

These cookies are AMAZING!!! I followed the incredients exactly but I also read the reviews and noticed how everyone changed the baking powder amount, which I guess Heather corrected to 1 tablespoon which is what I used. Absolutely delicious!! When I was glazing them I sprinkled some green and red sugar crystals to make them more festive for the holidays. I did run out of Anise extract so for the glaze I used almond extract. Thank you for the recipe Heather, they remind me of something my Grandmother use to make. Brings back wonderful memories and the kitchen smells great!

Eggplant Parmesan II

This is a family favorite. I've made this so many times already and keep forgetting to write a review. My hubby doesn't care for eggplant and would refuse to eat any...until now when one day he tried a bite and went for a full helping and then had seconds...You just have to try this, its easy to make and so good. I follow the recipe exactly but today I'm adding mushrooms to the spaghetii sauce for variety.

Fabulous Zucchini Grinders

Wow! Just had this for lunch and it was amazing. I did add two extra ingredients to the zucchini when I was browning them: 2.25oz can of sliced olives and two button mushrooms chopped up. I also took other's advice to toast the bread before adding the zucchini mix and I put the zucchini between two layers of cheese. This is better than the chicken parm sandwhiches I get at the sandwhich shops.

Fresh Strawberry Upside Down Cake

I would recommend waiting more than an hour before serving because an hour or so after baking I had the first bite and was disappointed because the strawberries tasted bitter and they didn't take form but were runny. But a few hours later and my family all took a slice and the strawberries held together beautifully. They all raved and loved it. My husband even had seconds, and I was suprised when he said "I don't like it, I love it!" So I had a slice later and found that it was really good and didn't have that bitter taste that i noted earlier. The day after and I'm having my another slice and it honestly tastes better than yesterday. I will make this again soon.

Honey Bran Muffins

Excellent breakfast! I followed this exactly but didn't have enough raisins so I added chopped apples like other reviews recommended and it was sooooo good! Okay, maybe I didn't follow it exactly because I also added a dash of cinnamon and nutmeg. Really good!

Healthy Garden Salad

I've made this salad so many times now and keep forgetting to review it. I have followed the recipe exactly but sometimes I just don't have all the ingredients on hand so if I don't have limes then I use lemon juice instead. And I've also had to substitute grapeseed oil with extra virgin olive oil. Simply Delicious! I've even substituted the beans for other beans...still delicious. Of course I prefer the black beans because they just have that perfect texture. But this is a summer time favorite for my family!

Waffles I

Great recipe and soooo easy to make. But i did add a spoon of brown sugar and I added more vanilla by accident. I was afraid it would overwhelm the taste but luckily the waffles didn't taste like vanilla and they weren't sweet. (husband doesn't like sweet waffles so he loved these). This recipe is a keeper and will be using it again and again.

Zucchini and Razor Clam Fritters

Wow, this was amazing. Combining zucchini with clams a great tasty idea. I did adjust the recipe because I didn't have some of the ingredients on hand. I used only 3 eggs and used scallions instead of onions. Also, my zucchini was shredded not diced because I had extra shredded zucchini from zucchini bread I was baking. And I used half a cup of clam juice with half a cup of milk. Sorry, I know these changes might affect the results so I plan to make this exactly next time. I just had to say thank you for a great recipe. UPDATE: yep, made it again this week and this time followed the recipe to a "T" (well, almost, I still had to use shredded zucchini because husband hates zucchini so I have to make it as invincible as possible) but boy, was it good. I made this twice in one week so I think that speaks volumes. Thank you for sharing this recipe.
