Good Old Fashioned Pancakes

Great basic pancake recipe. I've stopped buying pre-made pancake mix and stick this recipe whenever the family wants pancakes. Its easy and good.

Grilled Marinated Swordfish

I've been making this dish for some time now and I can't believe I haven't reviewed it yet. It is sooo good. Personally its the best swordfish recipe I've found. I try others but they just don't measure up. This is a family favorite. And another bonus: so easy to make! Thanks for the recipe.

Waffles I

Great recipe and soooo easy to make. But i did add a spoon of brown sugar and I added more vanilla by accident. I was afraid it would overwhelm the taste but luckily the waffles didn't taste like vanilla and they weren't sweet. (husband doesn't like sweet waffles so he loved these). This recipe is a keeper and will be using it again and again.

Zucchini and Razor Clam Fritters

Wow, this was amazing. Combining zucchini with clams a great tasty idea. I did adjust the recipe because I didn't have some of the ingredients on hand. I used only 3 eggs and used scallions instead of onions. Also, my zucchini was shredded not diced because I had extra shredded zucchini from zucchini bread I was baking. And I used half a cup of clam juice with half a cup of milk. Sorry, I know these changes might affect the results so I plan to make this exactly next time. I just had to say thank you for a great recipe. UPDATE: yep, made it again this week and this time followed the recipe to a "T" (well, almost, I still had to use shredded zucchini because husband hates zucchini so I have to make it as invincible as possible) but boy, was it good. I made this twice in one week so I think that speaks volumes. Thank you for sharing this recipe.

Seafood Pasta Salad

Simple to make and a great meal especially on hot summer days. The creamy dressing is delicious. I don't add the celery because I have some picky eaters who hate them so I subsititute the celery for green onions to add the color and more flavor. Otherwise I follow the recipe exactly and love the tang of the vinegar with the balance of sugar. It tastes better than the salads the deli sells.

Chicken Breasts with Herb Basting Sauce

Big hit with the family and I loved not just the taste but how easy this was to make. I did follow some of the reviews and marinated the chicken for few hours, added potatoes, and doubled the spices. And I just had to add my own twist by adding about 4 tbs of white wine. Will make again soon. Thanks for the recipe.

Mom's Coleslaw

Best coleslaw recipe I've made so far. I made it last weekend by using a bag of ready chopped cabbage and carrots so I cut the dressing in half and let it sit in the fridge for a couple of hours. It was delicious and plan to make it again this weekend.

Summertime Sweet Pickles

Wow! Love this recipe. I had only half of the amount of cucumbers (what was left from my garden) and they were tiny so I think that's why the outer skin shriveled up but they tasted sooooo good!! I ate half of them in one sitting. Besides cutting the recipe in half, I didn't have sweet onions so I didn't use them and I had to substitute the mustard seeds (didn't have those in my spice cabinet) for mustard powder (used same amount as tumeric). I plan on making this again with the larger cucumbers in my fridge. Thanks for the recipe! Super easy and tasty!

Chocolate Applesauce Cake

Really good cake...and very moist. Followed it exactly except for the topping, I didn't have pecans so I substituted 1/4 c sliced almonds and 1/4 c. walnuts. Also changed the 2 tbs sugar for 2 tbs cinnamon-sugar spice. Yummy! I really like it with the sliced almonds and when I make it again I'll just add those. I used homemade apple sauce, which I think was sweetened, had me worried at first but luckily the cake wasn't too sweet. Lets see what others think once they have some.

Chicken Hurry

So easy and good! I used 6 drumsticks (removed the skin) and followed the recipe, just had to add a splash of white wine to it and cut back on the water. I also followed what others recommended with adding half an onion sliced thin to the bottom of the dish. Doesn't taste exactly like a BBQ sauce but boy is it good! You have to try this!

Maria's Portuguese Bacalau

I made this for my parents who are both from Lisbon, Portugal...and boy did I impress them! Thank you so much! As another reviewer mentioned, my parents said this dish is traditionally called Bacalhau à Gomes de Sá. This is a keeper and I'll be making years to come, especially for family gatherings. Fresh Strawberry Upside Down Cake

I would recommend waiting more than an hour before serving because an hour or so after baking I had the first bite and was disappointed because the strawberries tasted bitter and they didn't take form but were runny. But a few hours later and my family all took a slice and the strawberries held together beautifully. They all raved and loved it. My husband even had seconds, and I was suprised when he said "I don't like it, I love it!" So I had a slice later and found that it was really good and didn't have that bitter taste that i noted earlier. The day after and I'm having my another slice and it honestly tastes better than yesterday. I will make this again soon.

Delicious Egg Salad for Sandwiches

The title of this recipe says it perfectly, it's a "delicious egg salad". I just made this but didn't have green onions on hand so I sprinkled some dried chives and it was still very yummy.

Loved this recipe! Easy to make and delicious. This will become a frequent dish in my home. But I hate to say I did change one little thing- I just had to add a splash of white wine to deglaze the pan.

Fisherman's Quick Fish

Wow! You have to try this. Absolutely delicious and sooo simple to make. I baked some seasoned cubed potatoes along with it for a side dish so I kept the oven only at 425F and cooked the fish for at about 15 minutes. Otherwise I followed the recipe exactly but I marinated the fish a bit longer than called for and added some fresh parsley to top it off. Wonderful. Plan on making this again really soon. Roasted Brussels Sprouts

I never liked brussels sprouts till a friend recommended I tried roasting them and now I'm in love. I pretty much follow this recipe and they are incredible with a delicious nutty flavor. Sometimes I cut them in half to add a crispy crunch to them. So good!

Blushing Cranberry Pears

Really lovely recipe. I love the flavor the cinnamon stick gives to it. And it smells really good. After it cooled the juice left the pretty "blush" on the pears. I was really impressed. When I make it for dinner guests, I might try to thicken the sauce to serve it as a garnish to the pears and follow the advice of others by cutting the bottom so it can stand up making a pretty display. But today there were no frills and we all enjoyed it.

Fabulous Zucchini Grinders

Wow! Just had this for lunch and it was amazing. I did add two extra ingredients to the zucchini when I was browning them: 2.25oz can of sliced olives and two button mushrooms chopped up. I also took other's advice to toast the bread before adding the zucchini mix and I put the zucchini between two layers of cheese. This is better than the chicken parm sandwhiches I get at the sandwhich shops.

Oatmeal Pancakes II

Really good pancakes. I followed the recipe exactly except I didn't have quick cooking oats just the old fashioned oats. I don't know if that made a big difference in taste. But I'll be making these again.
