Maria's Portuguese Bacalau

I made this for my parents who are both from Lisbon, Portugal...and boy did I impress them! Thank you so much! As another reviewer mentioned, my parents said this dish is traditionally called Bacalhau à Gomes de Sá. This is a keeper and I'll be making years to come, especially for family gatherings. Thank you again!

Zucchini and Razor Clam Fritters

Wow, this was amazing. Combining zucchini with clams a great tasty idea. I did adjust the recipe because I didn't have some of the ingredients on hand. I used only 3 eggs and used scallions instead of onions. Also, my zucchini was shredded not diced because I had extra shredded zucchini from zucchini bread I was baking. And I used half a cup of clam juice with half a cup of milk. Sorry, I know these changes might affect the results so I plan to make this exactly next time. I just had to say thank you for a great recipe. UPDATE: yep, made it again this week and this time followed the recipe to a "T" (well, almost, I still had to use shredded zucchini because husband hates zucchini so I have to make it as invincible as possible) but boy, was it good. I made this twice in one week so I think that speaks volumes. Thank you for sharing this recipe.

Warm Belgian Endive and Pine Nut Salad

Made this last night for dinner. I tried the dressing before adding it to the pan and found it bitter (could be because I eye-balled the lemon juice) so I just added a dash of sugar. First time I've eaten endive and I will make it again! UPDATE: I had to change my four stars to five stars because my mom and I were craving this recipe so I made it again and this time measured everything exact and didn't add the sugar and everyone at home loved this recipe! Thank you for a delicious healthy recipe.

Blushing Cranberry Pears

Really lovely recipe. I love the flavor the cinnamon stick gives to it. And it smells really good. After it cooled the juice left the pretty "blush" on the pears. I was really impressed. When I make it for dinner guests, I might try to thicken the sauce to serve it as a garnish to the pears and follow the advice of others by cutting the bottom so it can stand up making a pretty display. But today there were no frills and we all enjoyed it.

Seafood Pasta Salad

Simple to make and a great meal especially on hot summer days. The creamy dressing is delicious. I don't add the celery because I have some picky eaters who hate them so I subsititute the celery for green onions to add the color and more flavor. Otherwise I follow the recipe exactly and love the tang of the vinegar with the balance of sugar. It tastes better than the salads the deli sells.

Sun-dried Tomatoes I

Love this recipe! I wish I found this years ago because its a perfect solution to all the tomatoes we get from our garden and sun dried tomatoes can be expensive at the market. I made this on the weekend and used half of them yesterday in a pasta/shrimp recipe. WOW! Delicious and perfect. I stored them in olive oil in a canning jar in my fridge. Next time I'm going to try to put in freezer bags and freeze them. Thank you for such a terrific recipe!

Espiros Dois (II)

Thanks for the recipe Scotty. My family is from Portugal and this is my mom's favorite cookie. I didn't give a full five stars because mine didn't look like the ones I see in the bakery...but I have to say they're still delicious! I think my egg white amount might have been off since the eggs were different sizes, but I'm definitly going to try to make them again. Thank you.

Fabulously Sweet Pear Cake

Good cake. The pears I used were very ripe. I didn't put any pecans because I didn't have them around, next time I'll add them. I regret following the reviews because someone recommended to do this in bread loafs because they found the texture to be dense....well, I did that and I divided the batter into 2 bread loaf pans because I was afraid 9x13 might be too much for us and thought to share a loaf with my in-laws but now I wish I didn't. Its definitly not dense like bread but very moist. I also topped it off with the brown sugar glaze on this site. I enjoyed it but my hubby wasn't thrilled with it. Next time i'll do this in a 9x13 pan and add the pecans with no frosting to really give this cake a fair review.

Three Bean Salad

I hesitated to review because I didn't have some of the ingredients but it was soooo good regardless that I couldn't help myself. I didn't have green onions so I used a small ordinary onion finely chopped. No cayenne pepper or celery ...we didn't miss them. No kidney beans but I did have black beans so I put those in instead. I also added a bit of cilantro and a garlic clove minced even though I added the powder version of garlic too. Everyone had seconds even the picky eaters. I'm keeping this one and using it again. Wonderful dish.

Pineapple Filling

Excellent filling! Thanks to the reviews that I read which helped me greatly because I only had canned crushed pineapple and saw one reviewer who used it successfully. Also followed another review who did it right on direct heat in a saucepan. Both variations worked and the filling turned out terrific which I used to fill a jelly roll and topped with coconut....delicious!

Cocoa Apple Cake

It tastes good but it was a disaster when I tried to get it out of the bundt pan. Luckily I wasn't bringing this cake to anyone because it split in half and the top part remained in the pan. I felt so discouraged because I've never had issues getting cakes out before. And I'm still racking my brain if I did something wrong. But my mom saw it and quickly fixed it. It doesn't look as bad now. But she found it too chocolately (she doesn't care for chocolate) and I love it because of the chocolate chips. Others are eating it and haven't said anything. It is a great way to get rid of all the apples I have.

Apple Squares

I found them to be very good. We have so many apples from apple picking and I was getting tired of making pie and had to try something new. I've tried making apple cake before and was really disappointed so I didn't have high expectations when I made this...but it blew me away and I enjoyed it. They're like apple brownies with a nice chewy texture. I followed what one reviewer said about not testing it for "doneness" by inserting a toothpick but just cooked it for the time the recipe required. I also didn't have walnuts so I had use peacans. And after putting the batter in the pan I lightly sprinkled the cinnamon sugar on top. Oh, and I added a bit more than a 1/2 cup of apple...almost used 1 cup just because I really need to get rid of the apples and I'm glad I did because every bite has apple in it. Yummy. I was giving them five stars but my husband didn't care for them and other family members agreed that they were just "okay" but nothing to rave about. So I took a star off. I'll probably try these again when I have too many apples at home.

Blackberry Peach Pie

Really good and a big hit with the family. I probably added more corn starch than required because I put heaping tablespoons in the mix so I didn't find this runny like some reviews' mentioned. But a note of warning: I did have to put a sheet pan on the bottom of the oven because some of the juices did spill over when it was baking. It was so easy to make and a delicious solution to the fresh blackberries my mom gave me. (I got sick of always making jam from them) I'm making this again very soon especially since I've got requests to make this for my in-laws and other relatives. Thank you for a terrific recipe!

Sunflower Broccoli Salad

I love this recipe! But I'm sorry I haven't followed exactly because bacon isn't liked by everyone. Also I had no raisins or green onions so I substituted for craisins and a bit of finely chopped onion, red or white. But it was a big hit at the family dinner and had to make again the following family get together. thank you for a wonderful way to eat broccoli!

Delicious Egg Salad for Sandwiches

The title of this recipe says it perfectly, it's a "delicious egg salad". I just made this but didn't have green onions on hand so I sprinkled some dried chives and it was still very yummy.

Brown Sugar Sauce

Used this to top off a pear cake I made from this site. It added another dimension to the flavors, but I had to give it 4 star because it was amazing when it was freshly made but the next day it was disappointing. I also found the brandy flavor to be a bit strong, next time I'll play around with the measurements.

Oatmeal Pancakes II

Really good pancakes. I followed the recipe exactly except I didn't have quick cooking oats just the old fashioned oats. I don't know if that made a big difference in taste. But I'll be making these again.
