Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Nov. 5, 2008
Great Frosting recipe and it was just enough to frost the 9 inch cake I made. I did follow the advice given in the reviews and had to add a tablespoon of cream cheese to cut down the sweetness. But this is much better than store bought frosting. Definitely will use again.

Pasta Melanzana

Reviewed: Jan. 24, 2009
Wonderful recipe. I took the reviewers' advice to sweat the eggplant. I measured everything by eye and added a zucchini to the mix and an italian cheese blend besides just the parm cheese. I will make this again! Everyone in the family enjoyed it.

Sarah's Applesauce

Reviewed: Feb. 12, 2009
So simple and really really good! I HATE canned applesauce but I needed applesauce for a muffin recipe, this worked great and for the first time I enjoyed eating applesauce on its own. I will definitly make this again just for a snack!

Vanilla Crepes

Reviewed: Feb. 23, 2009
I was looking for a quick crepe recipe and this one is great. The other recipes I've used the batter has to be made a day ahead of time. I did reduce the vanilla and I love crepes with fruit filling so I made it with some fresh blueberries I had on hand. I put the blueberries in a saucepan and heated them with 1/4 cup of fruit juice, a tbs of lemon juice, tsp of sugar, and thickened it with a 1/2 tsp of cornstarch. Filled the crepes with the warm fruit filling and sprinkled them with confectioners sugar. Fantastic breakfast!

Bechamel Sauce

Reviewed: Feb. 23, 2009
I needed this for a cod fish casserole dish and it was good. I did add about 1/4 cup of italian shredded cheese blend when it was done and some dried parsley with the dried thyme. I also omitted the cayenne pepper. But this is a great basic recipe. Thank you!

Warm Belgian Endive and Pine Nut Salad

Reviewed: Feb. 23, 2009
Made this last night for dinner. I tried the dressing before adding it to the pan and found it bitter (could be because I eye-balled the lemon juice) so I just added a dash of sugar. First time I've eaten endive and I will make it again! UPDATE: I had to change my four stars to five stars because my mom and I were craving this recipe so I made it again and this time measured everything exact and didn't add the sugar and everyone at home loved this recipe! Thank you for a delicious healthy recipe.

Gramma's Apple Bread Pudding

Reviewed: Feb. 23, 2009
I've been avoiding rating this recipe because maybe I screwed up since this is the first time I've made bread pudding. I made this for my mom who loves apples but both of us didn't care for it. On the other hand, my dad and fiance loved it and finished it off quickly.

Wow! Just made this for my parent's anniversary and they loved it. I did add a bit of white wine with the water and it was amazing. So far this is my favorite salmon recipe.

Sweet and Sour Chicken III

Reviewed: Mar. 5, 2009
This is the second time I've made this recipe and its good. I did add a dash of ketchup so it have a reddish hue but I think the ketchup also makes it more tangy which is a bonus.

Balsamic Roasted Red Potatoes

Reviewed: Mar. 5, 2009
My family enjoyed the potatoes as a side with the fish I served. I was looking for something different but simple and this hit the spot. I've given four stars because some thought the balsamic flavor was to heavy and some of the potatoes burned which I'm going to blame on my crazy oven. Next time I'll need to cut the cooking time and probably the vinegar. But I know I will make it again soon. Thank you for the recipe.

Espiros Dois (II)

Reviewed: Mar. 12, 2009
Thanks for the recipe Scotty. My family is from Portugal and this is my mom's favorite cookie. I didn't give a full five stars because mine didn't look like the ones I see in the bakery...but I have to say they're still delicious! I think my egg white amount might have been off since the eggs were different sizes, but I'm definitly going to try to make them again. Thank you.

Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 16, 2009
Great recipe and perfect cold remedy. Everyone is under the weather at home and this soup brought us all the comfort we needed. I did substitute the noodles for a handful of small shell pasta and added an additional handful of chopped green beans in addition to the carrots and celery. I also added a minced clove of garlic to the onion when I sauted it. I only eat my mom's chicken soup because I never found any that measure up to her recipe. Well, if she didn't agree with me I would feel guilty saying this but this is my new favorite chicken soup recipe!

Chicken Breasts with Herb Basting Sauce

Reviewed: Apr. 10, 2009
Big hit with the family and I loved not just the taste but how easy this was to make. I did follow some of the reviews and marinated the chicken for few hours, added potatoes, and doubled the spices. And I just had to add my own twist by adding about 4 tbs of white wine. Will make again soon. Thanks for the recipe.

Applesauce Cake V

Reviewed: Apr. 30, 2009
Wow! Made this for a birthday party and followed this recipe exactly. It was so easy to make. I topped it with cream cheese frosting and sprinkled chopped walnuts on the top. It went quickly at the party, everyone loved it, even a friend of mine who isn't a sweet lover had two slices! I will make this again soon. Thank you for the recipe.

Mom's Coleslaw

Reviewed: May 17, 2009
Best coleslaw recipe I've made so far. I made it last weekend by using a bag of ready chopped cabbage and carrots so I cut the dressing in half and let it sit in the fridge for a couple of hours. It was delicious and plan to make it again this weekend.

Cornish Game Hens with Garlic and Rosemary

Reviewed: May 21, 2009
Really good, but if I were to make 4 hens I would double the sauce ingredients. I Followed the recipe exactly but made only 2 hens and found the sauce was just enough for 2, I don't think it would be enough for 4.

To Die For Blueberry Muffins

Reviewed: Jun. 24, 2009
Wow, soooo good! Thank you for the recipe Colleen. I have never "loved" any of the countless blueberry muffin recipes I've tried through the years but this one is in its own league. I love it and plan to make some more when I get more fresh blueberries. The only thing I did change was cutting the streusel topping in half. Perfect!

Garden Fresh Tomato Soup

Reviewed: Sep. 7, 2009
This is a family favorite but I keep on forgetting to rate it. I've made this countless times. The recipe is perfect as is, especially when we get fresh tomatoes from our garden. I've recently started adding things to it by adding a handful of tiny pasta shells/bows and/or veggies like corn, green beans chopped, etc. So good!! Thank you so much for this recipe Charlotte.
