Baked Ziti I

Love this recipe! I've made it over a dozen times now but haven't added the meat to it yet (but I hope to in the future) because some family members don't eat meat. I also don't layer it but mix it all up, not sure if that makes much of a difference. But I do add chopped mushrooms to the sauce. Easy to make and so good! Thanks for the recipe.

Grilled Marinated Swordfish

I've been making this dish for some time now and I can't believe I haven't reviewed it yet. It is sooo good. Personally its the best swordfish recipe I've found. I try others but they just don't measure up. This is a family favorite. And another bonus: so easy to make! Thanks for the recipe.

Maria's Portuguese Bacalau

I made this for my parents who are both from Lisbon, Portugal...and boy did I impress them! Thank you so much! As another reviewer mentioned, my parents said this dish is traditionally called Bacalhau à Gomes de Sá. This is a keeper and I'll be making years to come, especially for family gatherings. Thank you again!

Chicken Hurry

So easy and good! I used 6 drumsticks (removed the skin) and followed the recipe, just had to add a splash of white wine to it and cut back on the water. I also followed what others recommended with adding half an onion sliced thin to the bottom of the dish. Doesn't taste exactly like a BBQ sauce but boy is it good! You have to try this!

Chocolate Applesauce Cake

Really good cake...and very moist. Followed it exactly except for the topping, I didn't have pecans so I substituted 1/4 c sliced almonds and 1/4 c. walnuts. Also changed the 2 tbs sugar for 2 tbs cinnamon-sugar spice. Yummy! I really like it with the sliced almonds and when I make it again I'll just add those. I used homemade apple sauce, which I think was sweetened, had me worried at first but luckily the cake wasn't too sweet. Lets see what others think once they have some.

Quick Egg Roll Dipping Sauce

Good recipe and quick. I made it for some steamed dumplings that were begging for a dipping sauce. It had a nice tang to it which everyone liked, maybe next time I'll play around with it and add some honey to sweeten it up. I did only add 1/2 tsp of ginger powder though, which for me was plenty.

Summer Corn Salad

Had only 4 large corn on the cob but I followed the recipe exactly only changed the amount of onion because I only had 1/2 red onion left, and WOW! Incredible side dish to the burgers we had. Everyone loved it.

Grilled Peanut Butter and Jelly Sandwich

Just made it for lunch...yummy! Thank you what a great idea, grill a classic. I did spread the peanut butter on both slices and put the jam in the middle. Perfect even for an adult!

Roasted Brussels Sprouts

I never liked brussels sprouts till a friend recommended I tried roasting them and now I'm in love. I pretty much follow this recipe and they are incredible with a delicious nutty flavor. Sometimes I cut them in half to add a crispy crunch to them. So good!

Summertime Sweet Pickles

Wow! Love this recipe. I had only half of the amount of cucumbers (what was left from my garden) and they were tiny so I think that's why the outer skin shriveled up but they tasted sooooo good!! I ate half of them in one sitting. Besides cutting the recipe in half, I didn't have sweet onions so I didn't use them and I had to substitute the mustard seeds (didn't have those in my spice cabinet) for mustard powder (used same amount as tumeric). I plan on making this again with the larger cucumbers in my fridge. Thanks for the recipe! Super easy and tasty!

Fresh Pear Cake

The cake was nice. I followed the recipe exactly but no one was crazy for it. I was hoping for more pear flavor but felt the spices took center stage. The pears were from my brother-in-law's trees and they were really ripe when I used them for the cake. But I'm going to try another pear cake recipe before doing this one again.

Pear Pie III

Really good. Made it this evening and everyone enjoyed it. But I did double the amount of pears. And after reading the reviews I followed some of them by drizzling the pears with lemon juice and adding a touch of nutmeg and cinnamon before adding them to the pie. My pie did need 55 minutes to cook perfectly. Great recipe.

Fisherman's Quick Fish

Wow! You have to try this. Absolutely delicious and sooo simple to make. I baked some seasoned cubed potatoes along with it for a side dish so I kept the oven only at 425F and cooked the fish for at about 15 minutes. Otherwise I followed the recipe exactly but I marinated the fish a bit longer than called for and added some fresh parsley to top it off. Wonderful. Plan on making this again really soon. Roasted Pears with Caramel Sauce

My dinner guests enjoyed this but next time I'll cut on the dark brown sugar because I found that the dark sugar brought out too much of a molasses-like-flavor and not the carmel flavor I was hoping for. Overall, nice recipe that I'll probably make again with a few changes. UPDATE: I used light brown sugar this time and topped it with pistachio ice cream...WOW that was five stars. Really good. I've also tried this with peaches. Delicious! I highly recommend it.

Banana Banana Bread

This recipe is terrific! I followed the recipe exactly but I only had 2 cups of mashed bananas. The bread was gone over the weekend and I plan on making it again soon since I only got to eat one slice.

Garden Fresh Tomato Soup

This is a family favorite but I keep on forgetting to rate it. I've made this countless times. The recipe is perfect as is, especially when we get fresh tomatoes from our garden. I've recently started adding things to it by adding a handful of tiny pasta shells/bows and/or veggies like corn, green beans chopped, etc. So good!! Thank you so much for this recipe Charlotte.

To Die For Blueberry Muffins

Wow, soooo good! Thank you for the recipe Colleen. I have never "loved" any of the countless blueberry muffin recipes I've tried through the years but this one is in its own league. I love it and plan to make some more when I get more fresh blueberries. The only thing I did change was cutting the streusel topping in half. Perfect!

Cornish Game Hens with Garlic and Rosemary

Really good, but if I were to make 4 hens I would double the sauce ingredients. I Followed the recipe exactly but made only 2 hens and found the sauce was just enough for 2, I don't think it would be enough for 4.

Mom's Coleslaw

Best coleslaw recipe I've made so far. I made it last weekend by using a bag of ready chopped cabbage and carrots so I cut the dressing in half and let it sit in the fridge for a couple of hours. It was delicious and plan to make it again this weekend.
