Ditalini Salad with Black Beans, Corn, Lime, Cotija Cheese and Avocado

This is my family's new favorite recipe!! Took it to a family BBQ and everyone LOVED it!! Made the recipe as directed (using frozen corn instead of canned, because I had that on hand) but thought it needed just a little more color so added grape tomaotoes (halved) and some red onion. I mixed all the ingredients except the cheese and avacado the night before and let it "marinate" (stirring occassionally up to the party.) Added in the avacado just before serving and put the cheese in a bowl on the side to be added as an "optional topping" to accomodate dairy allergies in the family. Note: You can use the pasta type of your choice to meet dietary needs (i.e. whole-wheat, gluten free, etc.) Will definitely be making this one again!!

Vegan Black Bean Soup

This soup was ok. Tasty, but more of a "vegetable soup with black beans" than a black bean soup. Not exactly what I had in mind.

Kielbasa Stew

We LOVE this recipe!! Nobody in my family likes tomatoe soup so we used crushed tomatoes instead of soup. Like others suggested, I added potatoes, celery and carrots. Based on other reviews - I didn't use any additional salt. Since I have to work all day and wanted this to be ready when I got home - I threw all the ingredients in a crock-pot and let it cook on low for 8 hours. FAB-U-LOUS!!!

Made these for my dad - who said he hasn't had them since his mom passed away. They turned out great - just like I remember Grandma making them. Easy & tasty - can't complain!

Fat Pete's Fudge

I didn't like this fudge, at first - but after letting it sit for a day, it grew on me. And, received GREAT compliments from all that tried it. It's easy enough to make. I made a batch w/out peanut butter for my son who has peanut allergies and nobody liked that near as much as the one with peanut butter. I also found it hard to swirl the peanut butter, so think I'll go with other reviewers and just melt the PB into the mix, next time. My biggest hang-up regarding this fudge is that the color is not that appealing. I used a mix of semi-sweet and milk chocolate which turned a weird gray-brown after adding the marshmellow.

Peppermint Patties

These turned out great - but weren't the easiest in the world to make. Based on others reviews, I started with only 4 cups of sugar. However, I ended up with a sticky, chewed bubble-gum type consistency that was horrible to work with. So, I continued to add a bit more sugar until I got to a consistency that could be easily rolled into a ball. I'm guessing I ended up around 5 cups of sugar. I'm not familiar with Candy chocolate, so I used a mix of semi-sweet and dark chocolate chips (with added oil as noted on the package for dipping fruit.) It worked - but these were a real pain to dip so I think next time I'll try the candy chocolate. Everyone who tried them - loved them, though!

Saltine Toffee Cookies

These are flippin' FANTASTIC and sooo easy to make!! I added them to my Christmas cookie distribution this year and got rave reviews from everyone!! I made mine in a bigger pan (based on others reviews) and found that it left a sloppy mess with not enought "goo" to cover the crackers. Next time, I'll stick with 9x13 pan. Otherwise - this recipe was awesome!!

Cranberry Sauce

By FAR the best cranberry sauce ever!!! So easy to make, too - so no reason to ever buy canned sauce, again. I took other reviewers advice and used 1/2 brown sugar and 1/2 white. Also cooked until it was the desired thickness for my liking. LOVED IT!!!

Mincemeat Cookies

I don't like mincemeat - but made these cookies for my Dad, who loves it. Turns out the entire family loves them & they've become part of our Christmas Cookie Collection. Recipe makes approx 10 doz. I usually frost only half, as other reviewers have noted, they taste good with or without frosting.

Beer Dip I

This was FANTASTIC!! Highly recommend it! Only suggestion ... don't use the pretzel sticks, shown in the picture. Hard to get much dip on them - everyone agreed would have been better with regular pretzels.

Slow Cooker Chicken and Dumplings

Thought this was a GREAT recipe - but very, very rich. And apparently I have a mild lactose intolerance because this made me very sick (although I ate a bunch because it was soooo tasty!) Only complaint was that 2 cans of biscuits was a bit much. I think one can would have been plenty.

Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

I was disappointed after reading all the reviews, with how lame these were. I followed the recipe and they tasted fine - but I didn't tell anyone what they were and everyone guessed they were plain chocolate cupcakes. Certainly not enough 'kick' and the frosting was not that appealing.

Slow Cooker Carnitas

My husband is hispanic and was APPALLED to see me making carnitas in the crockpot. But after he tasted them - he never complained again!! In fact, he has invited his parents over (who make carnitas the traditional way, to try mine this wekeend!!) We left out the cinnamon, trippled the spices for a 4lb shoulder and cut the meat into quarters to help the spices penetrate, as others suggested. We also "crisped" up the meat, as it should be, in the oven before serving. FANTASTIC!!

Chicken Pot Pie IX

This recipe was absolutely FABULOUS after a few minor changes as suggested by other users. I added a lot more seasoning (poultry & garlic) and also boiled my chicken/veggies in Chicken broth instead of water. I also mixed the chicken with everything else and then added to the crusts. Absolutely DIVINE!! My husband has a dairy allergy but I was able to make this with lactose free milk and butter for the first time EVER he's been able to eat pot-pie. Definitely a keeper in my family!

Roast Sticky Chicken-Rotisserie Style

This spice mixture is unbelievable and RIGHT ON!! My husband and I will NEVER buy a rotisserie chicken again. We mixed up a batch and put it in our spice bottle so we have it readily available. We lift the skin - spread it under the skin - then also cover the skin of the chicken - before letting it sit overnight (if possible). Best darn chicken EVER!!!

Roasted Apples and Brussels Sprouts

My kids love brussel sprouts, but we always eat them steamed. I was looking for a way to change things up a bit and given the good reviews, thought I would try this. Nobody, in my family of 4, liked this recipe. Bummer, too, since we had such high expectations.

Slow Cooker Chicken Taco Soup

Given all the great reviews, I was really expecting to LOVE this! Unfortunately, I felt that the taco seasoning (I used a pkg, not the recommended recipe shown here, so maybe that was my mistake?!?) added an odd flavor to the 'chili' that I just couldn't get past. I did not use beer - but chicken broth, instead. I think this recipe is a great starter/base, but the seasoning just isnt right for me. =(
