Brunch Enchiladas

These were a big hit at a family gathering. I made 2 trays. To both I added chopped red pepper. To the spicy one, I added chopped spicy sausage and minced jalapenos. For the egg mix, I used skim milk (cream? WAY too rich) and added white pepper. For the cheese, I mixed cheddar and monterey jack, and served everything with salsa and sour cream. I will definitely make this again!

Empire Cookies

Lovely recipe and exactly what I was looking for. No changes needed. I made them quite tiny; they were perfect little mouthsful, and therefore not very filling. They looked so pretty as well among a tray of sweets. Thanks for this recipe.

Lemon Bread

Epic fail! I have to assume it's something I did instead of the recipe, because so many other reviews were good. However, this baby didn't rise AT ALL. It was a brick. I did try some of the adjustments that other reviewers tried, as I like it really lemony. Perhaps I'll try again and stick to the original recipe.

Blueberry-Lemon Pound Cake

Yow wow! This rocked! Served for Easter dessert and leftovers were served again with the coffee cakes the next morning. In addition to the lemon extract, I added about 1/4 c. fresh lemon juice plus extra zest. I coated the blueberries with flour so they wouldn't sink. That worked nicely. There was too much batter for my stoneware bundt pan, so I was able to bake a smaller cake too. It was far too jiggly after 60 minutes, but perfect at 80 minutes in the oven. I combined juice and zest from one lemon with enough icing sugar to make a fairly runny glaze, which I drizzled over the finished cake. The end result was nicely dense, just the way pound cake should be. Will be making this one again, no question!

Mandarin Orange Cake I

I made this after someone recommended it for a potluck. I followed some advice and added 1 tsp orange extract. A little tense during the baking, as I made it in a stoneware bundt pan. It took 50 minutes to bake. For the icing, I mixed the pineapple and pudding, then folded in the whipping cream (from review advice). I found that I had some extra icing left over after covering the cake, so I added another can of fruit then dished it into meringue cups for an additional dessert. Altogether, it worked out well.

Quick Chili I

Very fast recipe to put together and it tasted great. I made a few changes, such as adding dried oregano, hot paprika and a pinch of cayenne. I omitted the salt - WAY too much sodium. I used a bottle of beer instead of the water, and let it simmer for 30 minutes before adding the beans (plus some chopped green pepper). I let it simmer another 30 minutes, and served it with grated cheddar and a dollop of sour cream on top.

Quick, Homemade Hamburger Soup

Thanks for this hearty, easy recipe. I made a few changes and it turned out great. First, I sauteed a chopped onion and minced garlic with the ground beef. I used fresh carrots and frozen veg instead of canned (better texture and WAY less sodium). I didn't peel the potatoes either. No need. I added some fresh basil and dried oregano and let it simmer for a little longer so the carrots would be tender. Next time I might cook the carrots with the beef to carmelize them (AWESOME flavour enhancer). I served the soup with a grating of mozzarella on top and thick slices of russian rye bread. Very filling!

Marinated Turkey Breast

Very nice! Cooked until 170 degrees on a George Foreman and it turned out tender and juicy. Used the same amount of marinade for only a 1 1/4 pound turkey breast, so I kept the marinade and reduced it, making a glaze for the finished product. Had no cloves, so I used both cinnamon and ginger, and the effect was pretty good! Very unusual combo of ingredients made for a really nice flavour. Husband loved it, son-who-doesn't-like-soy-sauce said "it's okay".

Spicy Baked Sweet Potato Fries

These were good. I took a fair bit of review advice and cooked them 20min at 400 then 15m at 450. This worked well, but they needed to be turned partway as the bottoms were crisping faster than the tops (even on Pampered Chef stoneware!). 2 Tbsp oil was WAY too much. I'd reduce it by half next time. Instead of sprinkling salt on the fries, I soaked them in a salt-water bath after cutting (about 2 hours before cooking), and used Mrs. Dash extra-spicy seasoning instead of taco seasoning to keep the sodium down. Too salty otherwise.

Tomato and Garlic Pasta

This is a nicely flavoured, quick and easy recipe to make. In the winter, the tomato paste is a good idea as fresh tomatoes tend to be tasteless. However, in the summer, I would definitely omit the paste, as it would interfere with the fresh taste. Fresh (not dried) basil is a must. My store didn't have it but the the frozen type worked well. I added a splash of white wine to the recipe when I added the tomatoes. Half the olive oil could also be substitued with butter, which gives a beautiful rich flavour.

Creamy Hot Cocoa

I made a big batch (4 x the ingredients)of this recipe for a gathering of friends. It was a fun afternoon get-together of hot chocolate and a variety of homemade cookies. Once the recipe was made, I transferred it to my slow cooker to keep warm. I brought out some liquers and let everyone add their favourites to their cups. Everyone liked it. However, I found it a bit "powdery" in texture, and found some cocoa sludge at the bottom of the cooker after the party. If making a big batch again, I would definitely use less cocoa powder and ensure that it was top-quality. As per other reviews, I used less sugar (just under 2 cups). Good idea!

Pleasant Pork Chops

Very nice! To keep the pork from drying (I used inch-thick tenderloins), I cooked them until inside temp reached 160 degrees, then removed them to a plate. Also, I used half butter, half x-virgin olive oil to up the heart health factor. Don't omit the butter, though. Adds a nice flavour and keeps the oil from smoking at high temps.

Best Ever Popcorn Balls

These were a big hit for my boy's Halloween party at school. They were just as easy as promised and very tasty. I added 1 tsp vanilla (as suggested by others)and drizzled the finished treats with melted chocolate, then scattered orange sprinkles over the tops. I think I'll make them again for the school Christmas Bazaar bake sale!
