Butternut Squash Soup

Overall a great recipe! However I did make some changes. I only used 1 pkg. of cream cheese and still found that it was still overpowering. I added a dash of cumin and salt. Only used 1 chicken bouillon and it was more than enough. I have a picky mother, which I thought was not going to touch it, but she enjoyed it very much!

Walnut Balls

Definitely a tasty pastry...I made sure to finely chop the walnuts prior to adding them to the flour, I also added an extra tsp. of vanilla. Next time I will make the balls much smaller, the recipe allowed for me to make about a dozen and a half of balls. When the rounds are too large they bake flat on one size. I am definitely going to make smaller rounds next time. I added half of an egg white to the dough and sprinkled confectioners sugar after baking. Will definitely make these again with a tad more perfection.

Pumpkin Gingerbread

Recipe was delicious. Not as sugary as one would think with 3 cups of sugar. Enough batter to make two loaf pans... I added about 1/2 a cup of walnuts to one loaf by folding them in after the batter was mixed in. I left one loaf without walnuts and it wasn't really a hit. The pumpkin bread with the walnuts was much tastier than the one without.

Veronica's Hot Spinach, Artichoke and Chile Dip

This year I was in charge of making an appetizer for Thanksgiving dinner. I made this dip and it was a complete HIT! Everyone absolutely LOVED it! I didn't find any canned green chiles, but added just enough jalapenos to add that zing to it. I will be making this for all our social gatherings!

Fresh Salsa

This recipe was amazing. However, I added half a can of tomato sauce and a 1/4 teaspoon of ketchup to give it the consistency of store bought salsa. I brought this with me to a bbq as an appetizer and it was a hit! Next time I wouldn't add so much cilantro. Enjoy!

Chicken Fried Steak Cuban Style

A delicious and quick meal! I prepared it a little different. I seasoned the beef for about an hour while I was boiling my potatoes. I added salt, pepper, a hint of cumin (don't use too much!), some oregano and italian seasoning (bought as a spice at local supermarket). I then layed out three bowls, one with an egg, the other with all-purpose flour, and the last one with seasoned bread crumbs. I covered strips with flour then immersed in egg then last but not least covered in breadcrumbs. It was great! I served with mashed potatoes and salad.

Jamie's Cranberry Spinach Salad

This is absolutely an amazing salad that complements just about any meal. I prefer to use baby spinach and I like to use red onions instead. I also top it off with a freshly grated parmesan cheese. Delicious!!

Cherry Cheesecake

I was in charge of bringing the dessert for my Company's Holiday party, and I chose to bring cherry cheesecake and assorted cookies. The cheesecake disappeared within 5 minutes of placing it on the counter. Everyone LOVED it. I was really nervous because I hadn't tasted it prior to serving. It is really delicous and I recommend it to anyone looking for a no bake, budget cheesecake. Do remember to watch your measurments as there is no room for error with this recipe.

Libby's® Pumpkin Roll with Cream Cheese Filling

Easy and Fabulously Delicious! This is always a hit for the holidays! I make it EVERY year and EVERY year it is a hit. It's not as hard as it looks, at first I was kind of skeptical in preparing because it looks a little complicated. Follow the recipe closely and it'll be fine.

Red Velvet Cookies

I was very disappointed with this recipe. I imagined them to be moist, and probably like everyone, I expected them to melt in my mouth. The cookies tasted very flour'y' and course. I followed the recipe closely and used exact measurements but found not to be impressed by the outcome. If there's a next time, I would add more sugar about 1/2 cup instead of 1/3 cup and perhaps salted butter instead of unsalted.
