Big Soft Ginger Cookies

Key to this recipe is FRESH spices. If your ginger is a year old, toss it & buy a new jar. I subbed 1/2 brown & 1/2 white sugar, 1/2 whole wheat & 1/2 white flour, and orange juice for the water (no discernible orange flavor in my opinion), and refrigerated the dough. I made them relatively small and got 4 dozen delicious cookies. These will be a staple in my house!

Vegetarian Gravy

So amazingly good. Everyone who tasted it raved about it, and the meat eaters didn't realize it was vegetarian until I ate it, and even then, they were skeptical. Turned me on to nutritional yeast, which has become a staple in my pantry.

Butternut Squash Soup with a Kick

I wanted this to be better than it was. Used roasted squash, but found it too plain for my taste. I added a bit more thyme & added some curry powder in the hopes to bring the flavors out, but it still just seemed . . . kind of boring. Not bad, just uninteresting.

Fabulous Zucchini Grinders

it's a great, simple batter. i added onion powder, garlic powder, cardamom & paprika, and halved the baking powder; dusted the fish in flour before the batter. wonderful!

No-Cream Pasta Primavera

I left out the green beans and the fresh herbs (because I didn't have them), and put the garlic in with the veggies because hubby can't eat onions. Love the recipe, especially roasting the veggies in the oven. Found a white balsamic vinegar at Trader Joe's that kept the color of the veggies.

Whole Grain Breakfast Cookies

Will become a staple in my home. Versatile, wholesome, and loaded with fiber! I substituted a scant 1/3 cup maple syrup for the agave & sugar, overripe bananas for the oil. Also added 1/2 teas. almond extract. Decadent! Thank you Iris!

Downeast Maine Pumpkin Bread

It's a great pumpkin bread base, but I made so many alterations I didn't feel comfortable giving it 5 stars. 3 cups is too much sugar for my taste - I used 1 cup each brown & raw. Also substituted 1/2 cup unsweetened applesauce for 1/2 the vegetable oil; and unsweetened vanilla almond milk for the water. Doubled the spices and added 2 teaspoons baking powder & 1 teaspoon vanilla. Other additions I would consider would be raisins or dried cranberries or chocolate chips. Oh, and I used a cup of egg substitute for the 4 eggs. I think this makes the pumpkin bread a bit healthier, and considering how yummy it is, I feel a bit better about the 3 slices I've had today.

Sesame Asian Tofu Stir-Fry

sure looked like a winner, but it had 2 major problems that made it not work. 6 tablespoons oil in the sauce made it greasy, and the sauce wasn't thick enough to stick to the foods. sorry, but i couldn't finish my serving, and for me, that says a lot.

Roasted Asparagus with Balsamic Vinegar

Great! I put followed the directions, but then topped it with some Parmesan cheese and threw it under the broiler for a few moments. The balsamic gives it such a wonderful flavor.

Mexican Zucchini Cheese Soup

Awesome soup! I made a few minor changes, simply to match my pantry. Had no yellow squash so used only zucchini. Used only regular canned diced tomatoes & a full-sized can of corn. I ordinarily choose not to use processed cheese food but I also know that regular cheddar cheese would be too oily & wouldn't blend properly, so I used a 16 oz jar of salsa con queso. I also used just a small amount of cumin because it just adds the right amount of heat. It was more a soup consistency than a chowder consistency, which I really liked. I could eat the entire pot! I will be making this again!

Cream of Fresh Asparagus Soup II

Great recipe. I like the use of roux as a thickening agent. I used a leek instead of onion, vegetable broth instead of chicken broth, and evaporated skimmed milk and the soup was delicious. I'll be making it again.

Banana Muffins II

Excellent! I substituted unsweetened applesauce for the butter, added a tablespoon of flax seed (mixed in with the flour), and cinnamon & nutmeg. I know some people don't think you should rate a recipe if you've toyed with it - I think as long as you keep the basic recipe, and you are able to tweak it for your own taste, that makes the original recipe all the better!

Best Bread Machine Bread

throw away your bread machine recipe - nothing works better than this. be sure to set your machine properly for a 1-1/2 lb loaf; that's the only mistake i made.
