Creamy Pimento Cheese

Reviewed: Sep. 14, 2012
I will NEVER buy store bought again! I've made this several times. It's great exactly as written. I regularly add more garlic to my liking. I also, periodically, add chopped jalapeño, or chipotle peppers (chopped) with sauce....or even both! Mix it up...the base recipe if perfect! I prefer using Cabot X-Sharp White Cheddar. Try it! NOTE: Light mayo and light cream cheese cut calories and taste JUST as good!

Blender Hollandaise Sauce

Reviewed: Mar. 16, 2012
LOVED this! Turned put perfectly. Make sure the butter is bubbly hot when slowly adding...if not, it may be a little on the runny side. Also, can be on the lemony side so you can adjust to taste if you prefer it thay way. Quick, easy, and oh-so-good!

Cheesy Ranch Potato Bake

Reviewed: Sep. 22, 2011
OMG! This is not a dieter's recipe but definitely sinful indulgence! Added bacon too to make it even more naughty (but oh so good, as bacon makes just about everything yummier!). A little goes a long way in this recipe. Family loved it.

Broccoli Cheese Soup

Reviewed: Sep. 22, 2011
I LOVE this soup! I have made this soup several times now. I have made it as written and it's wonderful! I have also lightened it up to make it healthier since I was dieting and it was still awesome! To lighten, I used half light butter (I Can't Believe It's Not Butter is my fave) and the other half EVOO to sautée the onions. I used half extra sharp cheddar and half velveeta for the cheese called for. I've used garlic powder, and fresh garlic....both work great. Finally, I used skim milk rather than whole. So, that being said, even after making these minor changes and lightening it up a bit, it was JUST as yummy and satisfying with less guilt while dieting (although I think I eat more of it when I think there are fewer calories...defeating the purpose of lightening the recipe to begin with maybe? lol) I highly recommend this recipe, lightened or not! Super easy and my whole family loves it.

Quick and Easy Alfredo Sauce

Reviewed: Mar. 21, 2010
Who knew an alfredo sauce could be so quick, easy, and oh-so good?!! I even used skim milk and reduced fat cream cheese. It took a while for mine to thicken, so I added a little more parmesan cheese. You can switch up the variations with this sauce...add grilled chicken, or better yet chicken and spinach (10 oz frozen package, thawed and drained) with the noodles for an awesome Chicken Florentine:)

Smothered Filet Mignon

Reviewed: Jan. 12, 2010
LOVED this recipe! My husband boasted that it was the best steak he ever had! Didn't see that coming:) He's had lots of steak! Wonderful display as well! **NOTE** Make sure your steak is at room temperature before grilling to achieve maximum tenderness! I removed the marinated steak from the fridge and let sit for an additional 30 minutes to reach room temp. I highly recommend this recipe!

Hot Artichoke and Spinach Dip II

Reviewed: Nov. 11, 2009
Awesome recipe!!! So quick and easy! The only changes I made were that I used Asiago cheese instead of Parmesan because that's what I had on hand. Very similar flavors and turned out wonderfully. I also used light mayo and light cream cheese to cut down on the fat. I highly recommend this recipe. Even better than the previous spinach artichoke dip recipe I made from this site. Definitely a keeper!

Spanish Flan

Reviewed: Oct. 1, 2009
I made this with my son for his Spanish project. Per reviewer suggestions, I added an additional egg and let it cook for 15 minutes longer because it was still very uncooked in the center. It came out perfect and his teacher raved! This was SO simple, much more so than I expected. Will definitely make again! I'm thinking cream cheese to the mix would be wonderful as well.

Baked Teriyaki Chicken

Reviewed: Jun. 20, 2009
OMG! I made this last night for my family and it was a hit! My changes...I doubled the glaze to begin with (you can always freeze any leftover). I used seasoned rice vinegar since I was out of apple cider vinegar. I also used brown sugar per other reviews, the change made sense to me with the combined flavors. I substituted lite soy to cut down on the sodium (a must). Also, I added a can of crushed pineapple. If you add the pineapple, cut back on the sugar. I had chicken breasts on hand and threw in some chicken legs for the kids (all skins removed). ***MAKE SURE you line your pan with aluminum foil! I'm still scrubbing my stovetop with oven cleaner because of spattered glaze. I can only imagine having to clean an entire pan! I served with steamed rice and broccoli for sides. Better than any restaurants at a fraction of the cost. Thanks for the recipe... SO easy and delicious!!! :)

Speedy Oven Fudge

Reviewed: May 23, 2009
I followed this recipe exactly. I've always made fudge the "hard" way...and was pleasantly surprised with the results of such a simple recipe! This is very rich, so a little goes a LONG way! My kids loved it and I will definitely make my fudge this way from now on. Thanks for the recipe!:)***UPDATE: I added a layer of peanut butter on top for a change...my kids and hubby devoured it. My kids said it was like peanut butter cups. Yummy!

Mexican-Style Goulash

Reviewed: May 23, 2009
This is a quick and easy recipe. After following the recipe to the T, I felt it needed some extra spice for my liking. I added a can of Rotel tomatoes and chilis. I then added 2 cloves of garlic, 1 Tb. cumin, 1 Tb. paprika, and 1 tsp. cayenne pepper (I'm from Texas...and we like our spice!). I also added extra chili powder. I garnished with chopped cilantro. With these additions, I'm giving 5 stars. My husband says its a winner. I think adding a can of drained ranch beans would be good too...will try that next time. Thanks for the recipe!

Fresh Tomato Salsa

Reviewed: May 5, 2009
This is a recipe known to me as pico de gallo. I use less serrano (2-3 depending on size...or even 1 large one, adjust to taste). Serranos tend to be very small. Also, use roma tomatoes for less acidity. This is also a great base recipe added to mashed avacado and extra lime juice...commonly known as guacamole! Yummo!

Veronica's Hot Spinach, Artichoke and Chile Dip

Reviewed: May 4, 2009
Definitely cured my spinach dip craving. This is even better with the added kick from the jalapenos and chilis! I used reduced fat cream cheese and light mayo. I also used one whole jalapeno, chopped along with the jarred. Delish! Thanks for the recipe! I will make this again and again:)

Waldorf Tuna Salad

Reviewed: May 2, 2009
I made this today for lunch. I didn't have the dates, so I used dried cranberries instead which was good. Also, I used pecans instead of walnuts. The results were very good and made a yummy meal served on greens...but I decided I wanted to jazz it up a little to really suit my taste. I added a little low fat sour cream, 2 tbs. dijon mustard, two baby gherkin pickles diced (sweet relish would suffice), and 1 tsp. garlic salt. Jackpot! Can't wait for my hubby to try it:) Update: My husband raved, so it's a keeper!
