Mari's Clam Lovers Chowder

We like HEAT so I added 1 chopped jalapeno (for 6 serving size) omitted the carrots (because I don't think we wanted the sweetness) and added more celery and potatoes. This was so very GOOD!

Homemade Chicken Cacciatore, Sicilian-Style

In addition to what's listed, I added a red bell pepper minced and about a 1/2cup fresh Italian Parsley and 1/4 teaspoon sugar to reduce acidity in tomatoes. I also added 1 cup of grated Parmesan cheese to the sauce and stirred it in. Served it over whole wheat angel hair pasta. This was wonderful!

Downeast Maine Pumpkin Bread

I kept this recipe as exact to specs as I could. I used 2 5x9 inch bread pans instead. One aluminum and one Pyrex. Pyrex cooking time was exact 50 minutes and turned out dry. Aluminum pan took about 15 min longer and was moist and perfect. I don't know why. All I can suggest is that you watch it very close. I used the toothpick method. With glass pan, toothpick was clean. Toothpick was just a bit sticky on the aluminum when I took it out. Again, the aluminum pan with sticky toothpick was perfect! Hope it helps!

Sweet Potato Pie I

I made a SUGAR-FREE version of this substituting sugar with granulated Splenda (Wal-mart's version is Altern, same thing!) I used imitation vanilla flavoring also. Turned out GREAT! I would recommend buying a pound and 1/4 of sweet potato as the potato loses weight when you peel the skin off. After the first pie was gone, I made 3 more! I'll make another one for Thanksgiving. Soooo good!

Chicken Cordon Bleu I

I just have to say, please do NOT add ANY salt to this dish. I failed to remember that the ham already has enough salt flavor. My family loved this even if it was a tad bit salty. I dipped the filled and rolled chicken in egg wash and then rolled in bread crumbs. I did not melt cheese on top but instead made a cream sauce with heavy cream, butter, paprika, dry white wine and a bit of corn starch. This was so good and easy, I'll do it again and again. I would recommend a little black pepper on the chicken before rolling. Just no salt!!!

Easy Lemon Cookies

I used a packet of Kool-aid as someone suggested in a review instead of the lemon extract or juice. Worked very good and very lemony! These were good but in my opinion, way too sweet with the powdered sugar on top. I'll definitely make these again but w/no powdered sugar!
