Pretty Chicken Marinade

MODIFIED FOR WATER SMOKER With a few changes, this marinade produced a beautiful and tasty whole chicken (3 1/2 lbs) after 5 hours of SLOWWW cooking in a water smoker (i.e., indirect heat with a large pan of water between the fire and the chicken). In place of the liquid smoke, I used one cup of water-soaked apple chips on the fire. Olive oil reduced to 1/3 cup. 2 tsp of Sriracha Hot Chile Sauce in place of black pepper. Very tasty!

Grilled Tri-Tip with Oregon Herb Rub

HERBS IN DRY WHITE WINE, WATER SMOKER Dissolved the herbs in 1/2 cup of sauvignon blanc, and marinated four hours in the refrigerator. Then cooked the tri-tip at 200 degrees in a water-pan electric smoker. Delicious!

Leftover Roast Brunswick Stew

Sweet & Sour Version Used only one cup of BBQ sauce, but it was still a bit too sweet. So I added one TBSP of vinegar. Set the slow cooker on low and four hours later the beef was very tender and tasty.

Avocado Feta Salsa

The feta cheese creates an AMAZING contrast of flavors with the tomao, onion, CILANTRO (not parsley) and avocado. WE ADDED: 2 or 3 TBS of V-8 Juice and about 1/2 TSP of hot sauce. MUCH better!

Avocado-Shrimp Salad

With a few changes, this turned out to be a really delicious salad. I added diced celery to the basic recipe. Then I blended 1/4 C mayonnaise and 1/4 C sour cream, together with one TBSP of horseradish and one TBSP of minced garlic (from a jar). Served the salad au naturel with the dressing on the side. Dear wife and I loved it.

Slow Cooker Pineapple Pork Roast

So tender you could cut it with a spoon! Used fresh cranberries & Splenda to make a sauce. Added 1/2 cup Soy Vay brand Island Teriyaki sauce (contains garlic and ginger). Otherwise followed recipe as given. DELICIOUS.
