Chickpeas in Tomato Sauce With Feta and Wine

Reviewed: Mar. 8, 2009
Followed recipe precisely except adding the oregano just before the tomatoes. I served it over baby spinach and loved loved the combo. I love how easy this is with so much coming out of cans - only 1 onion to chop! Could probably cut back on the cheese to be healthier without losing much. Even though its a lot, though, I love cheese!

Crustless Spinach Quiche

Reviewed: Dec. 13, 2008
Very good. I used olive oil and added a red bell pepper, 2 big cloves of garlic, and half a shallot after the spinach. I would add the garlic sooner next time and maybe use a little less - I love garlic, but it was definitely present as a flavor. I also added 1/2 c milk to the eggs. Used two heaping cups of cheese - one part-skim mozz and one of italian blend. Finally, I added a shake or two of nutmeg. I baked in the 350-375 range for 40 minutes. Perfect! I might add bacon next time, but this way is healthier and still really tasty!

Chex® Muddy Buddies®

Reviewed: Nov. 22, 2008
Too addictive and delicious. I forgot the vanilla and used milk chocolate chips. I divided between two bags and used more powdered sugar in one. The ones with more sugar were much more attractive. The ones with less looked more like dog food sadly, but I preferred flavor balance.

Quinoa Side Dish

Reviewed: Nov. 22, 2008
Yummy side dish. Sauteed the onion and garlic in the butter before adding the quinoa and broth. Added a few green onions at the end. I added the salt even though I was using chicken broth, but it wasn't too much.

Pumpkin Soup

Reviewed: Nov. 22, 2008
I wasn't judicious enough with my seasoning. I put in 2 bay leafs briefly before rethinking it in favor of about 3 shakes each of cinnamon and nutmeg. Also, used 2 tbl of the heavy whipping cream and whole milk for the rest. It was good and I quite liked it, but it was not the best pumpkin soup ever.

Quinoa and Black Beans

Reviewed: Nov. 16, 2008
I used 2 cups of chicken stock, a full cup of quinoa and added a bell pepper. Also increased the spices by 50%. I used canned corn and just threw the whole thing in. Should have held back - it was a little overwhelming. Overall healthy and tasty. Looking forward to trying it cold tomorrow for lunch!
