Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Oct. 17, 2009
A great dressing! I have made this for the past three family Thanksgiving dinners (Canadian so we just celebrated) and it has become a staple in our meal. It can be difficult to find Turkey sausage in Canada so I use either bits of turkey or sometimes porks sausage. I omit the turkey liver and use chicken stock instead of turkey stock. I also cook mine in the slow cooker on low for 3-4 hours (doubled recipe) to help save oven space. A wonderful dish with loads of personality.

Squash Casserole with Crunchy Pecan Topping

Reviewed: Oct. 17, 2009
This was a hit at our Thanksgiving Dinner although I felt it could almost be served for dessert. It is definitely a sweet dish and I didn;t need to double the recipe, even for a crowd of 12 (due to the fact that most people don't take heaping servings of sweet veggies at dinner). My husband (who loves sweets) adored this casserole.

No Bake Lime Mousse Torte

Reviewed: Oct. 17, 2009
This cheesecake has a wonderfully subtle flavour and is so smooth. I have served it many times, even at my church's annual ladies' tea. It was a smashing success!

Prosciutto Wrapped Asparagus

Reviewed: Oct. 17, 2009
This was a great hit at Thanksgiving (Canadian). It's difficult to find Neufchatel in Alberta so I use cream cheese instead. I would recommend using 3+ spears (using new asparagus that are thin and tender) and half a slice of proscuitto spiralled around the bundles to help tame the saltiness. I put the bundles on a pan in the BBQ (we were short on oven space) for 15 minutes and they were delicious! The tips were a little crispy and it made this wonderful carameling on the proscuitto. Now a staple of the Thanksgiving meal.

Clark's Quiche

Reviewed: Oct. 17, 2009
I used brocolli instead of spinach, gouda instead of jack (the ingredients I had at the time) and no onions or mushrooms due to allergies, I this was a huge success. My husband loved it!
