Shrimp Scampi with Pasta

Made this tonight for my family for Valentines, it was great! It was easy! It was relatively quick! All pros in my book. I made this as written and thought it was terrific. Great choice for a weeknight meal or Lent and nice enough for a special occasion.

Swiss Chicken Casserole II

This was so easy and had great flavor! I made a few changes based on others suggestions: cut the breasts into bite size pieces, seasoned the chicken with garlic powder, black pepper and dried parsley, and (because I didn't have any cream of chicken) used cream of celery soup. My slightly picky 7 year old raved and my more picky 4 year old choked down a few bites as well. Success! Will definitely make again.

Ham and Cheese Bowties

This was pretty good. I would strongly recommend that if you are going to use the whole box of pasta that you make more sauce. Some reviewers didn't feel it needed it, but if you like your sauce more "saucy" then you're going to wish you had. If you're going to use just the 8 oz, then you will be fine. All in all, pretty good though. I followed the directions with the exception of using a cheddar/colby blend and more noodles. I'll make this again.

Avocado Soup with Chicken and Lime

I found this to be very good. The lime gives this a bright, fresh flavor. I do agree that this is better with a bit more avocado. If you like the flavor of jalapeƱos but not the heat, try seeding them. I will be making this again!

Stuffed Green Peppers

These were surprisingly good and very filling. I wasn't sure what to expect since I had never made stuffed peppers before. I didn't bother to peel the tomatoes, as it seemed like to much work and added garlic powder. Not sure why, but mine were watery when I took them out of the pot (could be fat?), but I just held them above the sauce for a moment to drain and then just stirred the sauce. I will definitely be making these again.

Chicken Chilaquiles

This was really good! I had some chicken and chorizo that I needed to use or toss and came across this recipe. I typically follow the recipe the first time I make something so I have a handle on what it is supposed to taste like, but I did have to make a few changes based on what I had on hand. I only had one can of enchilada sauce (10 oz) so I used some salsa verde that I had to make up the difference. I also used canned corn (drained) since I didn't have frozen. Next time I make this (and I WILL be!) I think I'll add some black beans in and then toss some green onions on top. Easy and tasty! Thank you Carrie Ann!

Herb-Stuffed Red Peppers

My husband and I thought these were terrific! The only other stuffed peppers I had ever had always seemed a bit bland, but these had LOTS of flavor. I added garlic powder and used ground buffalo because that's what I had and they were really very tasty. I had a lot of extra filling and will use it this weekend to make mini poppers for a party.

Poblano Chicken Enchilada Casserole

My family LOVES this recipe, including my Grandpa-in-law who doesn't like anything new! I've made this many times for company and friends and have always gotten requests for the recipe. I do put in more poblanos (4-6), doubled the sauce, used 1/2 bunch cilantro, skipped the mushrooms since I don't like them, and added salt. I have made this with both flour and corn tortillas and prefer the corn with this recipe. Hope this helps. Enjoy.
