I'm starting to enjoy cooking more and more. At first, I was disheartened by it, but have gotten over that now! :)
My favorite things to cook
Indian food (a big surprise for me!), grilled/baked fish, new dishes!
My cooking triumphs
When my husband says "Wow" to a dish I cooked, that his mom (only the best chef ever!) makes, that makes me soar! He's my favourite person to cook for, yet very hard to please. I know I've done an outstanding job when it's compared to his mom''s SOOO close! She REALLY is THAT good.

Grandmother's Buttermilk Cornbread
This recipe is PERFECT!! I followed the instructions and quantities exactly and the cornbread was a HIT! The only thing I changed was that I used a non-stick muffin tray to make mini-cornbreads. The recipe makes exactly 24 muffins - perfect individual serving sizes! I had cornmeal and buttermilk left the next day, so I made as many batches as I could with what was left-over and delivered to my neighbours. They all loved it!! Oh, the only other thing I noticed that my cooking time had to be lowered to only 18-20 mins as my oven is pretty powerful. The cornbread still tastes fresh today - Wednesday (and I made this batch on Monday!). Amazing recipe!!

Pork Sausage and Cabbage Pitas
Wow...I just finished cooking this up, and although I haven't put it all together yet, the cabbage and sausage individually taste great! Together, I can only imagine how wonderful they will go together! (I'm just waiting for my husband to get home with the pitas so we can eat!) The only things I tweaked was using hot italian sausage and add some maple syrup when browing the meat. Delicious recipe! Thanks for sharing! (Guess we'll see what my biggest critics think!)

Poor Man's Beer Batter Fish
I made this for dinner last night and my husband loved it! I used Tilapia fillets...and served the fish with sweet potato fries. I made my own tartar sauce using mayo, pickle relish, lemon juice, and a pinch of sugar. I think I made too much batter, so I sliced up an onion and made onion rings! I have to admit, the batter didn't coat as well as I would have liked, but it was definitely delicious! The whole meal came together perfectly!
