Awesome Honey Pecan Pork Chops

simple way to liven up pork chops. I added a bit of sherry to the sauce to make it saucier. nummy.

Butternut Squash and Turkey Chili

Great way to use our freshly harvested butternut squash. I served with sour cream. I could see adding a cup of cooked small shell pasta to the mix to give it a bit more body. Nice Fall dish.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

this was very flavorful. I would increase seasonings. however a little sweet. Maybe a tarter apple would help. All in all a very good vegetarian dish. Left quite a bit of veg. un mashed. This was good more like a stew. Used greek yogert non fat. I could see other root vegi. Parsnip? I will make it again. More lentils. Garlic.

Rita's Eggs Strata

The brown sugar and Worcestershire sauce gave this a unique appealing flavor that I hoped it would. I added some chopped ham and about half of the cheese. You could easily add mushrooms, cooked sausage or a vegetable like broccoli. This will be my go-to egg strata from now on. Thanks Rita.

German Red Cabbage

Creamy Carrot Soup

No cream necessary for this excellent soup. I used half of the butter and a bit of olive oil for saute. Served with a garnish of fat free sour cream. Very rich tasting without all the fat. A beautiful soup.

Neat Sloppy Joes

This was my first from scratch "sloppy joe". It was a little sweet so I added 1T of tomato paste and a little more vinegar until it had just a bit more sour bite. My skeptical 4.5 yr. old grandson quickly asked for more after devouring a half sandwich. Also, I made with ground turkey. So long "Manwich".

Shrimp Salad with Vinaigrette

I had a few shrimp in the freezer that I wanted to use in a salad of some sort. This recipe was perfect because I also wanted to use up some oranges. I didn't have the pimento or green onion so I can't comment on those ingredients. I'm sure they added another dimension. But the salad as I prepared it really caught my husbands attention. He loved the shrimp and orange combination. I added some sugar coated almonds on top. All and all a real keeper. I could also imagine avocado in the mix.This was numm.

Maui Onion Dressing

Just the sweet onion dressing I was looking for.(no papaya seeds available) It is very versatile and can be used on a variety of salads. Last night I used it on a salad of spinach, orange pieces and toasted walnuts. Perfect!

Kicked Up Mac and Cheese

This was a great baked mac and cheese. I did increase pasta to 3 cups. The casserole was creamy with the promised kick.Not dry at all. Excellant!

Bubba's Jambalaya

This turned out exceptionally well. A great dish to use up odds and ends from my frig., freezer and pantry. For the smoked sausage I used a smoked Polish sausage. Amazingly enough I had a little bit of everything else the recipe called for except the Cajun seasoning and bell pepper. For the seasoning I used a bit of cayenne and black pepper instead. For the bell pepper I chopped up some jarred roasted red peppers which I would use again. What I discovered is a recipe that is well suited for the way I cook and the pantry I keep. I served it with a quarter of lemon to squeeze over for a little acidic pop. Great...full of flavor.

Apple Cranberry Stuffed Pork Chops

I love this recipe. Reaffirms my belief that every cook should invest in a dutch oven.Suggestion: any left over "stuffing just sprinkle over the top of chops before baking. Pork chops are juicy, flavorful and there is enough liquid in the pan to make a decent sauce. I did not have apple juice so I made a simple reduction of red wine and some brown sugar. Delicious. Easy. You could add a little butter to that if you wish for more richness. I served with fresh asparagus and warm French bread to wipe the plate clean.(as the French do) Very yum.

Sugar Coated Pecans

Made these for a gathering today. Immediate swooning and recipe asking took place. I am not exaggerating. I recommend that if you bring this snack to an event bring copies of the recipe... I am not kidding!

Savory Chicken Breasts

This recipe lived up to everyone's positive review. Most notable is the moistness of the chicken. I also appreciate the creative possibilities in the ingredients. Here are my variations: I used low fat cream of chicken soup. I seasoned chicken with pepper,oinion and garlic powder. Instead of milk I used white wine. I also mixed some dried green and red bell pepper into the soup. I served over a bed of Orzo with whole green beans on the side...quick,easy, excellent!
