This turned out exceptionally well. A great dish to use up odds and ends from my frig., freezer and pantry. For the smoked sausage I used a smoked Polish sausage. Amazingly enough I had a little bit of everything else the recipe called for except the Cajun seasoning and bell pepper. For the seasoning I used a bit of cayenne and black pepper instead. For the bell pepper I chopped up some jarred roasted red peppers which I would use again. What I discovered is a recipe that is well suited for the way I cook and the pantry I keep. I served it with a quarter of lemon to squeeze over for a little acidic pop. Great...full of flavor.
