Butternut Squash Casserole

Reviewed: Jan. 18, 2009
I have to say FANTASTIC! This dish was so good paired with a pork tenderloin. I like others, had to improvise, instead of vanilla wafers (I didn't have on hand) I used 1 cup of frosted flakes with half the brown sugar and melted butter. I also used a little smaller casserole dish as suggested by other reviews. My guests and husband were so impressed. Thanks so much for a great recipe.

Caramel Apple Pork Chops

Reviewed: Nov. 9, 2008
This is a fantastic recipe even if you follow the directions as is. But like everyone else, I have my own version... I like extra sauce because we are dippers. I also don't bake the chops I keep them covered in the Microwave (Not cooking, just resting) while cooking the apples, then I add it all together and zap it in the Microwave for about a minute just to give the chops a brief waming then it's ready. This way the chops don't dry out. Nothing worse than dry porkchops. I serve with White rice and garlic butter steamed green beans.

Mrs. Sigg's Snickerdoodles

Reviewed: Dec. 20, 2008
Never having a Snickerdoodle before I was uncertain but 1900 people can't be wrong so I just made two batches for a cookie swap and they are Marvelous! I took the advice and substituted 2 Teaspoons of lemon juice for the cream of tarter as I didn't have any. I also made sure the butter and eggs were room temp before using. They came out so fluffy and wonderful, I'm hooked. Thanks Beth and all the other helpful reviewers. Keep on cooking.

Onion Cucumber Salad

Reviewed: Mar. 28, 2009
I have made this before omitting the peppers and using a 2 red onions and it is amazing. The red onion gives it a nice color. Next time I make it i'll submit a picture. Very refreshing for a transitional dish after a hearty foods all winter.

Honey Fruit Salad

Reviewed: Mar. 29, 2009
This is the way fruit salad should be served. With no yogurt or other distracting flavors. This recipe is perfectly light and flavorful. Myself and my guests all loved it and everyone wanted the recipe. I used 1 catalope, 1 little pkg of blueberries, half a lb. of green grapes sliced in half, 2 small bananas, 1 pint of strawberries halved. After slicing the bananas I coated them in lemon juice (to keep them from browning) in a small bowel mixed the honey and lemon jiuce as stated in the recipe and then poured over the fruit, mixed well and served about an hour later. It was so fresh and a perfect ending to our first real bbq in March. Will absolutly make this again! Next week in fact.

Chicken and Bacon Shish Kabobs

Reviewed: May 26, 2009
I adjusted this recipe to the ingredients I had on hand. I kept the marinade the same and used Chicken wrapped in bacon, strawberries, onions & pinapple. I marinated these over night and have to say they were the BEST kabobs we've ever had. Suggestion... when cooking them on the grill only cook on the top rack till they are almost done then put them on the bottom rack to crisp up the bacon. Will absolutely make these again!

Simmering Chicken Strawberry Kabobs

Reviewed: Mar. 22, 2010
This recipe is so interesting (in a great way) The strawberries give it a nice change from the usual kabob. I agree with another member the vadalia onions are a must as they take on a sweetness when cooked. Tip for the strawberries: try to find firm ones that are less ripe as they will stay on better and not become too soggy. Delicious!

All American Roast Beef

Reviewed: Nov. 16, 2008
I followed the recipe to a T, however, I added a few Teaspoons of water to the bottom just to give the juices a head start. Well I should have added more becuase there really weren't any juices till I started slicing the meat. While the meat was very juicy I didn't have any drippings to make the gravy. I made that from scratch using "D's Skillet Gravy" featured on here. I did find the meat to be a little tougher but I think it's because of the cut of meat (Eye Round)I would suggest using a 1/2 cup of water next time. I will make again for sure! Thanks for the EASY recipe.

Hamburgers and Ketchup Gravy

Reviewed: Jan. 26, 2009
Surprisingly it was pretty good, very flavorful. I didn't chnge a thing! I too did have a problem with the burgers staying together but I think it was because it was previously frozen hamburger, maybe to much moisture. I will make this again. Thanks for the recipe.

Orange Chicken Stir Fry

Reviewed: Mar. 22, 2009
Strong orange flavor, and hubby didn't care for that. I personally loved it but he wouldn't eat it. The only change I made was not putting in the orange zest as I didn't have any on hand. Plus I used olive oil insted of veg. oil to saute the chicken. To bad he didn't enjoy it because I would've made this again.
