Chocolate Walnut Bars

I really liked the crust - the chocolate part was a little odd, but I will probably make again. I used 1/4 c sugar in the crust and 1/4 c in the topping.

Glazed Apple Cookies

I used butter instead of shortening, and only 3/4 c sugar (I used rapadura). I also just used a dash each of nutmeg and clove. I skipped the glaze - these were really good!

Scott's Buffalo Wing Sauce

I did butter, texas pete, garlic powder, cayenne, and honey. Just eyeballed the whole thing, then grilled the wings. Husband loved it.

Plain Cake Doughnuts

Not bad. Added extra cinnamon and used fresh ground nutmeg. Also subbed about 1/3 c rapadura for the white sugar and used half freshly ground whole wheat flour. Fried in lard.

Easy Pavlova

My new favorite dessert. I've never had pavlova before, and this was spectacular. Simple to make, plus you have to eat it all that day. Sounds perfect to me! I did cut the sugar back to 1 c.

Lemon Blueberry Drop Scones

These were a nice easy recipe. I used plain kefir instead of lemon yogurt and just splashed in a little lemon juice. I also used all fresh ground flour (wheat pastry), and only 3 T sugar (it was plenty). I skipped the glaze. They had a nice texture!

Apple Banana Cupcakes

This is a very nice recipe - I don't like plain banana cupcakes/muffins - the apple makes them perfect. I used butter instead of shortening. I cut the sugar down to 2/3 c - could have gone to 1/2 cup (and used rapadura) and used all fresh ground flour. I saw a lot of people diced instead of grating the apple, but grating was so quick and easy! Dicing would have taken me twice as long. We will definitely be making these again. Maybe with some nuts next time.

Apple Coffee Cake

I used only 1/2 cup of evaporated cane sugar instead of the regular sugar and added cinnamon into the batter. For the topping, I only used about 2 T of sugar. It turned out very nice.

Pumpkin Waffles with Apple Cider Syrup

I was looking for a pumpkin waffle recipe and chose this one because it used so many eggs. I used freshly ground flour and only 2 T rapadura instead of the brown sugar. I do wish they had more pumpkin - I will probably try to add more next time - but they did turn out nice and light and the spices were good but not overwhelming. I did not make the syrup.

Chocolate-Zucchini Cupcakes

I used about 3 squares of chocolate, 1 1/4 c rapadura, 1/2 cup olive oil, ~1/2 cup applesauce, and whole wheat pastry flour. They had a nice texture and the zucchini made them very moist. I think I may try adding a few chocolate chips next time, and probably move up to 4 oz of chocolate.

Zucchini Brownies

After I started making these, I read some of the negative reviews and got a little nervous, but I LOVED how they turned out. I imagine it must have something to do with the freshness of the zucchini - I picked mine from the garden just a couple days before using it. I used only 1 cup of sugar, fresh ground whole wheat flour, and added maybe 1/2 cup of chocolate chips. I also skipped the frosting. We LOVED them. They are a tad more on the cakey side, but still fudgy enough to be brownies we like. We like thick brownies, so I made these in an 8x8 (or smaller) pan and cooked them longer (about 45 min total).

Cocoa Oatmeal Cookies

We love these! I used 1 c demerera sugar instead of the white and brown, used wheat pastry flour, and subbed choc chips for the raisins. The oats give them a great texture - the chocolate makes them fabulous.

Mango Blueberry Muffins With Coconut Streusel

I subbed 1 c of honey for the sugar and didn't add the buttermilk. I also used whole wheat pastry flour instead of all purpose, and coconut oil instead of butter. We enjoyed these - the mango and blueberries were a good combo.

Apple Crisp Cups

I enjoyed these - I used only 1 cup of butter, subbed honey for sugar with the apples, used whole wheat pastry flour and cut the sugar back in the crisp part to 1 1/3. Next time I'll cut the sugar WAY back and try some honey. I will also use the food processor to cut in the butter as some others have recommended - I had already added the oats before I realized what a hassle that was going to be. I was a little worried about how these were going to come out of the pan, but they popped out easily and stayed in one piece - and I just greased with a little olive oil.

Orzo and Rice

This was not super exciting - but made a nice change from plain white rice that I sometimes make to accompany meals. I used homemade chicken broth instead of the bullion and water. I will be using this again.
