This was sooooooo good. I did do a few things differently, only because I used what I had on hand. I have hungry, hungry boys to feed, so I doubled the recipe, for starters. Instead of salsa, I used large can of rotel. Instead of pinto beans, Iused a can of Ranch style beans, rinsed(essentially pintos) and a can of black beans. Added shredded Monterey Jack. I used corn tortillas, instead of flour. And the change that I think had the biggest impact, was a used a can o green enchilada sauce. To make this recipes even easier, I made it more like a casserole, and cut the tortillas into quarters, layered the bottom of the dish with two layers of tortillas, then covered them with enchilada sauce(about half the can.) Next, I put the mixture to cover the tortillas(Iused all of it.) I like onion, so I sprinkled minced onions over the mixture, as well as some garlic powder. Add, enough quartered tortillas to cover the mixture and poered the remaining enchilada sauce tocover tortillas. Finally, I covered with cheese(any cheese will do.) I have tried literally hundreds of recipes from this site and this recipe just went straight to the Number 1 spot!!! Thank you so much for adding this one!
