Roasted Pork Loin

I marinated with a paste that included garlic, S&P, olive oil. Soaked it in olive oil and chablis overnight. Cooked 2.98lb pork loin for about 1 hour and 45 minutes. Let sit covered with foil for about an hour. Very tender and succulent. I had never made pork loin before. Definitely easy and I will make again with glazed carrots and kale as a side.
