Roasted Beets and Sauteed Beet Greens

Love this recipe for the part on cooking the greens - love that I can get some use out of them. Cook the beets in olive oil and some rosemary springs!

Garlic Shrimp Pasta

I was looking for something quick and easy one night and this recipe was a great "jumping off" point for me! Used the basic recipe, added some spices - red pepper flakes in particular - and whipped it up. Served it over pasta.

German Pork Chops and Sauerkraut

I had this scheduled to make last night and since I was busy my husband made it for us. He made it following the directions exactly - except for only using a 15 oz. can of sauerkraut. It was great!

Roasted Brussels Sprouts

We love Brussels sprouts in out house and these were worth fighting over! First I couldn't resist eating one every time I checked them and second my son was mad that we left him so few! Followed recipe as written but maybe roasted them a little less time.

Easy Curry Couscous

It was awesome! I had whole almonds and forgot to toast them so I just sliced them and threw them on at the end. Cilantro I didn't measure, just rough chopped and added it too - could leave it out in a pinch. Great for leftovers too

Delicious! I used less herbs than called for (should have done less of the red pepper flakes too) because I was lazy! It was still great and made a good addition to our sirloin tips.

Roasted Beet Wedges

We love beets and I make this recipe at least once a week because they are delicious hot or cold. I make it as it says in the directions - I didn't use rosemary one time and I really missed the flavor. It doesn't mention it but I do NOT peel the beets before roasting them.

Lucky New Year's Black-Eyed Pea Stew

Zesty! Made this on New Years Day for luck (so far so good). I used regular cabbage because my store didn't have Napa, I eliminated the water chestnuts because they weren't in the directions, I used ham steak as other recommended and cut it up (don't know if they used the ham hocks also, but I didn't!), used canned black-eyed peas, and served it with Quinoa! I only made the changes because it's what I had and it was still great. I will definitely make it throughout the year as well as on New Years.

Cabbage Saute

This was delicious when first made and my husband couldn't stop talking about it when he had it with his lunch the next day. I used a chicken bouillon cube so I wouldn't have to open a can of broth - but everything else was as written. Delicious!

Tilapia Soft Tacos with Chipotle Cream

It was delicious! I've never used chipotle chiles before and it's lucky my family likes things HOT because I used 4 chilies instead of 2! My only problem was -- If you cook the seven ingredients for 5 minutes, how do you keep everything from becoming a blackened mess of cilantro and garlic like mine was?? Lower temp? take them out of the pan? It was still good but I need to work on that part... ETA: I've made this quite a few times (once a week?) since my first review. WE LOVE IT. I use wild caught Cod instead of Tilapia, halved the sauce ingredients and very carefully watch the ingredients cooking, take them out after 3 or 4 minutes and then spoon them on top of the fish as it's cooking. Much better.....

Healthy Garden Salad

I had a bag of edamame in my freezer that I wanted to use and so I found this recipe. It is fabulous! I switched the tomatoes out for chopped red pepper because I figured they would hold up longer. That's the only change I made - I even went out and found grapeseed oil and I think it made the salad. Our grocery store sells a version of this for $4.99/pound and this recipe beats it 100%

Spinach and Orzo Salad

This is, without a doubt, my most favorite salad in the world. The combination of the ingredients just play off each other. I have given this recipe out to more people than I can remember. It is a little time consuming with the chopping of the spinach and red onion but it's so worth it.

Grilled Hawaiian Chicken and Pineapple Sandwiches

This was really good - really easy to prepare too! The thousand island dressing added to it so don't skip it. Next time I will eliminate the lettuce and tomato on mine because it sort of overtook the rest of the sandwich and maybe I'll put two rings and two slices of cheese on mine :)

California Chicken

LOVED IT! Even my son who hates cooked tomato loved it. I had to use shredded Montery Jack cheese which worked out just as well. Next time I think I'll try marinating the chicken but it was great just as it was.

Balsamic-Glazed Salmon Fillets

It was easy enough to prepare but the glaze never thickened up for me. My husband and I enjoyed it, my teenage son, who does love salmon didn't like it so much. I'll still make it again.

Jose's Shrimp Ceviche

I used this recipe in conjunction with a ceviche I had at a restaurant so I ommitted the celery and avacado and used a red onion instead and added mango. I let the shrimp soak in the lime juice for about 4 hours, put everything together and put it on ice to get it really chilled. I quartered flour tortillas, sprayed them with cooking spray and baked them @375 for 10 minutes and served them with the ceviche - they were perfect together.
