Javi's Really Real Mexican Ceviche

I really enjoyed this recipe. I used shrimp, crab, and scallops. After reading the other reviews, I set aside a few hours for the shrimp to cook. It came out beautifully!

Lentil Soup

This was a very hearty soup. I used balsamic vinegar and I used a half package of frozen chopped spinach added at the end as another reviewer recommended. It was delicious!

Creamy Chicken Lasagna

This was an easy dish to make, using no bake noodles. I used 1/3 less fat cream cheese - garden flavor and added a few sprinkles of a garlic & basil herb blend. I doubled the recipe (except for the noodles - I used 9) and used a 9x13 deep lasagna dish, covering the dish with foil for the first 30 minutes. It came out thick and very flavorful. I will definitely make this again.

Holiday Chicken Salad

I don't know what more I can say after 595 reviews but...WOW! This is my new favorite chicken salad recipe by far! These flavors work so well together. The only modifications I made were that I used half the pecans (only because that's all I had), I used cherry flavored craisins, and I used Jane's Krazy mixed up salt (that was the closest I had to seasoned salt). Also - I poached the chicken in broth. I think that kept the chicken from being bland. I can't wait to make this and serve it with crackers (and some chilled sauv blanc) at the next "girls get together"!

Cha Cha's White Chicken Chili

Amazingly easy - has a bit of a kick to it. I made it (almost) true to the recipe 1st time around, as I always do. It would be very easy to make different variations. I am usually a "from scratch" cook, but I will use this shortcut recipe again!

Spinach and Carrot Quiche

I followed the recipe exactly, except I poured the entire contents into one deep dish pie crust (9 inch). It took an extra 5 minutes in the oven. It baked up beautifully! It was easy to make, and the carrots mixed in with the spinach gives this quiche stunning presentation. This is a great brunch or special occasion dish.

Downeast Maine Pumpkin Bread

LOVE - LOVE - LOVE THIS RECIPE! I followed mom2sixgreatkids' modification. Then I split the batter between 2 larger loaf pans, and added dried cranberries & chocolate chips to one of the loaves. I left the other plain. They were both delicious! I will probably make this recipe at least half a dozen times throughout the holiday. Thank you!

Roast Sticky Chicken-Rotisserie Style

I used a 6 1/2 lb chicken and roasted it at 250 for 5 hours, basting it the last hour. The skin was a perfect golden brown, and a bit crispy. The meat was as tender as could be (although the pan drippings made the gravy come out a little too salty). I will definitely use this recipe again.

French Beef Stew

Followed the recipe. Mustard added an interesting new twist to it. I still felt it needed a little more taste so I added 2T worcestershire sauce. It gave it a lot of flavor. I'll probable use this recipe as a base and see what else I can do with it.

Irish Tea Cake

This recipe worked well for me. The cake is delicious and has a nice, vanilla flavor. I added the extra two tablespoons of milk to get the batter to a creamy consistency. This was so easy and my family loved it!
