Toasted Coconut, Pecan, and Caramel Pie

This pie is very very good! I have made it several times and everybody always loves it.....I used grahm cracker crust for mine that is pre made. It is very very easy and super rich!

Pretzel Turtles

LOVE making this candy. It is so easy. The hardest part is unwrapping all of the Rolos. I would HIGHLY suggest toasting the pecans in a small amount of butter....this makes them so much better. Just put them in a pan on low and turn them alot so they don't over toast. Everybody loves these...I have made them for three years and just never got around to a review. Also, I use the square butter snaps and they turn out well with these.

Chocolate Mint Candies Cookies

These cookies are very good! I thought the dough took a while to make but maybe that's just me. I agree with everyone else.... do NOT over cook! Mine only needed 8 minutes tops. I found the Andes mints in a bag and was able to break them in half and it was more than enough to cover the top of the cookie.

Teriyaki Chicken Pizza

This pizza was AWESOME! I pretty much followed it with a few modifications.... I used premade crust and did bake it for 7 minutes. I used a Teriyaki GLAZE bc I don't like a dry pizza and I felt it would be better. After I cooked my chicken and chopped it up small, I also drizzled it and mixed it up with the glaze so it was coated as well. At the end, I put a small drizzle of glaze all over the top before popping it into the over. It was wonderful and not too dry...very very flavorful and was even great as leftovers.

I LOVE this chili recipe! I wanted a recipe that was different and would really stand out... this was it! I followed the recipe exactly and it is just amazing. I love how it is rich and spicy, but not too spicy. It is perfect and I am glad I made extra to freeze so that I can have it whenever I want!

Marinated Grilled Shrimp

This is a wonderful way to grill shrimp. The flavor is outstanding! I add some Heinz Chili sauce to the recipe and it makes it even BETTER. The fresh basil and garlic are a must... it is not the same with the dry stuff. I've even used this to cook the shrimp indoors on a grill pan and it is still great.

Slow Cooker Marmalade Curry Chicken

This is a pretty easy recipe and I liked it a lot. However, I made some minor changes. I doubled the chicken stock and by the way, it was still spicy. I love spicy, so I did not mind. Next time I will not double the stock. I thought I needed to since I was using extra chicken. It was the perfect blend of sweet and spicy in my opinion. I added the cornstarch (1 TB) to make the sauce thicker. I also added fresh basil and the juice of half a lemon. It REALLY made the sauce come alive!!!! I served this over orzo pasta with steamed broccoli. It was all so good together. The broccoli was fab in this sauce. I love this recipe b/c it was not full of fat and creaminess like a lot of slow cooker recipes. If you don't like spicy, you should still try this and just cut the cayenne in half. I did it with the full amount and my husband still liked it although he usually won't eat spicy food. I felt like this was a fun way to cook the chicken while getting an extremely healthy veggie incorporated, too.

Cranberry Salad I

I followed this recipe exactly and it was fabulous! Everyone LOVED it and ate it all up. It was so delicious. I actually froze mine and let it thaw while sitting out and it still tasted great.

Easy Herb Roasted Turkey

This is a wonderful turkey recipe and it was the first one I ever made. Everyone loved it! I made some changes and used a lot of butter in addition to the olive oil, and I used fresh herbs and fresh garlic. I put the mixture under the skin and over the skin and basted often. It was great! We had to cut it ahead of time, but reheated it in the original juices and this really made it fabulous. The flavors sunk in even more!

Onion Roasted Sweet Potatoes

My Crab Cakes

This is the best crab cake recipe. I love it and so does everyone who eats them. I use panko bread crumbs on the outside and it makes a BIG difference in how crispy they get. SO GOOD. If crab wasn't so expensive I would make them all the time!

Easy Never Forgotten Guacamole

This guacamole is FABULOUS and I don't usually even eat the stuff! I had lots of this. I made it for a Mexican dinner I was hosting and everyone loved it. I think the cream cheese really makes it wonderful. I used fresh garlic in mine and added extra lime and cilantro. This recipe really stands out.

Pumpkin Turkey Chili

This was pretty good! I used ground turkey breast b/c it is even lower in fat than regular ground turkey and I added lentils. The lentils worked very well in this recipe and add a lot of fiber. The other thing I did was add more tomatoes... I do not see how this would work with only one can. Next time I will use crushed instead b/c it makes for a smoother chili. I added extra spices to mine like some of the others. Pretty easy and very healthy. Oh, yes and I did not use the peppers b/c I don't like them in chili.

Apricot Lentil Soup

Great recipe. I also noticed that this turned out very thick, which was fine. I added a little extra apricot but my husband said he could not taste it... he loved it anyways. I could not find red lentils so I used the regular kind. I also like to add to the flavor by increasing the spices. Very easy and VERY filling!

Key Lime Pie VIII

This is a wonderful key lime pie recipe! I have had people tell me it is the best they have ever had. Keep in mind it is a no- bake kind, so it does have a different texture than the traditional kind. I use the Nellie and Joes key lime juice you can get in the grocery store. Why use plain old lime juice when the key lime stuff is right there? I have made this four times. If you use the Nellie and Joes and like a tart flavor, go ahead and use the cup. If not, use 3/4 of a cup and it is still great. If you make it all low fat, I would stick with 3/4 cup of the key lime juice or else it turns out extremely tart. (but still good...)

This recipe is very easy but it does take a while to do. It takes a while to dip all the balls, etc... but it is worth it. Everybody loves these. Be creative and use different flavors!

Easy Cheese Ball II

This is a great cheese ball. I do, however, add to it. It is SO easy to make it even better. I just use some chives, real bacon bits, and tabasco and it turns out really well! Also, use the fine shredded cheese b/c it makes a big difference. I also toast the almonds. Even if you use pecans, toast them and it makes it taste really good.

Oatmeal Carmelitas

I always double this recipe.. it is fabuluous! I always double the chips and nuts... you can use pecans and they are great. You really need to make these and let them cool, put them in the fridge for a while, and then cut. I have much better luck with cutting this way. Also, it is a lot of butter. Just do it. If you cut back they will be to crumbly. Once they cool and set up they are GREAT!
