I love my corgi!
About this Cook
I am a teacher and my favorite things to do are cook, read, shop, drink wine, spend time with friends, travel, love on my animals, and exercise!
My favorite things to cook
I love to bake but don't do it unless it is for others or it is not too much fun for me...I like to share what I make. I love grilled food, seafood, and anything very flavorful. My favorite is asian cuisine but I don't cook it very often.
My favorite family cooking traditions
I really don't have a lot of traditions from my family....I pretty much grew up on hot dogs and spaghetti.
My cooking triumphs
I love to create my own recipes. I take ideas and just go with them. Cooking for guests and family members is something I've done more of lately. It is a triumph for me because I have a hard time focusing on more than one dish at a time but I am getting much better at it!
My cooking tragedies
I went to a friend's house to cook a big meal for a dinner party. We were hosting it together but she is not a cook. Her oven was seriously messed up and everything burned on the bottom but did not cook all the way through. I was mortified. It was awful.

Toasted Coconut, Pecan, and Caramel Pie
This pie is very very good! I have made it several times and everybody always loves it.....I used grahm cracker crust for mine that is pre made. It is very very easy and super rich!

Pretzel Turtles
LOVE making this candy. It is so easy. The hardest part is unwrapping all of the Rolos. I would HIGHLY suggest toasting the pecans in a small amount of butter....this makes them so much better. Just put them in a pan on low and turn them alot so they don't over toast. Everybody loves these...I have made them for three years and just never got around to a review. Also, I use the square butter snaps and they turn out well with these.

Chocolate Mint Candies Cookies
These cookies are very good! I thought the dough took a while to make but maybe that's just me. I agree with everyone else.... do NOT over cook! Mine only needed 8 minutes tops. I found the Andes mints in a bag and was able to break them in half and it was more than enough to cover the top of the cookie.
