I am a mother of 4 very picky girls. I am 1/2 thai and the rest is all european. I work full time and during school do a lot of overtime. I am always looking for something quick, easy and healthy to feed my family (and those 3 things don't usually go hand in hand).

Salisbury Steak
This is really good, but instead of the ketchup I used bbq sauce. It was way better than the ketchup.

Chicken Milano
This was great with a few modifications, hence the four star rating. I almost doubled the sauce and added baby bella mushrooms. I threw everything together in a 13 X 9 baking dish noodles, 2/3 of sauce, chicken (I butterflied and pounded thin), then I layered (on top of the chicken) proscuitto and provolone and then the rest of the sauce over everything. Topped with provolone and baked for about 20 min and then under the broiler for a couple minutes... It was wonderful!!

Tilapia Scaloppine
This recipe was more than AWESOME!!! I only used half of the lemon as I am mildly allergic to lemon and served over whole wheat linguine sprinkled with fresh grated parmesan. I will definitely be making this a whole lot more. Thanks for posting!!
