Skillet Corn Bread

These were excellent. When I was forming the burgers, I realized that they were going to fall apart on the grill. So I placed the hamburger mixture back in the bowl and remixed adding 1/2 cup of plain bread crumbs.

BBQ Pork for Sandwiches

This was great ! I had 3 1/2 lbs of boneless rib, cut them into 1/2's, added the broth, 2 tbps of hickory smoke flavored marinade, a cup of water & 1 beef bullion cube. Slow cooked in crockpot for 4 hrs. After shredding, I drained & put pork into a cast iron pot on stove top, added a bottle of vinegar based BBQ sauce & a few dashes of cayenne pepper. (E. Carolina style BBQ)Simmered for 1 hr, stirring about each 15 minutes. Great recipe. We served with cole slaw on buns with chips. Just my wife & I, froze the remainder in qt size freezer bags.

Dorsey's Cream of Crab Soup

I use the recipe with a few changes, no water only broth, use two potatoes, dash of cayenne, worcheshire instead of soy sauce, more heavy cream than half/half & two garlic cloves. Delicious !

Velvety Chicken Corn Soup

Boilermaker Tailgate Chili

We found this recipe to be just ok. I froze the leftovers in qt size bags, my wife & I actually found the leftovers to be more flavorable. Word of caution... the addition of the Italian sausage means that you should have the antacid handy!

Southern as You Can Get Collard Greens

My wife said it was better than her Grandmother's. Wow ! Only thing I did differently was add a tablespoon of brown sugar. Also if you are new with collards be sure to wash them several times & I always cut out the big stems off the leaves.

Bacon Cheddar Deviled Eggs

My wife said that they were best deviled eggs she had ever eaten. I only cooked 3 XL eggs. I followed the reduced amout recipe except adding a little sour cream to the mix and sprinkling a few pieces of cut green onions on top.
