Spicy Bok Choy in Garlic Sauce

I had only tasted bok choy from the chinese food buffet before I tried this recipe and always thought it could've been done better. This recipe makes it the best! The sauce is delicious and would be good as a marinade for chicken, shrimp or pork. I had to substitue a few things for what I had on hand including dried ginger, hot sesame oil, garlic chili paste, teaspoon of seasame seeds, light brown sugar and regular fish sauce. It turned out much better than I had expected. I can't wait to make more of this dish!

Oatmeal Chip Cookies

If a regular chocolate chip cookie got busy with a regular oatmeal cookie, the result would be this wonderfully textured oatmeal chip cookie! This is going to be my new go-to recipe for any cookie that I bake as the mix-ins (i.e. chocolate chips) can be changed to whatever I like, let's say raisins, very easily. It also works great using half all-purpose flour and half whole-wheat flour. Also, I am going to add in an extra 1/2 cup of old-fashioned oats just to pump up the texture even more next time. And, adding in a teaspoon of cinnamon doesn't hurt either.

Farmer's Bread

Great recipe for a first-time bread-baker because of the simple ingredients and easy instructions. It was crispy on the outside and soft and crumbly on the inside - it looked very much like store-bought white bread. However, it tasted quite bland. The next time I make it I'll add 2 tsps of sugar to the yeast-water mix and 2 tsps of kosher salt to the dry ingredients to see if that helps any. Overall it's a wonderful, basic white bread that I'll use for a variety of things.

Turkey Bacon Carbonara

Fluffy Whole Wheat Biscuits

This recipe was super simple and easy to follow. I used a pizza cutter to divide my dough into equal portions since I didn't have a biscuit cutter and a small juice glass just wouldn't have given me the flakiness that I wanted (you have to have sharply cut edges to get good flaky layers). The next time I make these I will add just a little bit more kosher salt to keep them from tasting too bland. Quick tip: be sure to preheat your oven to 450 degrees BEFORE you begin mixing your dough.

It's Chili by George!!

My chili turned out GREAT! I was a little leery of adding all that tomato juice so I added a big can of diced tomatoes instead. But once I got everything in the pot it needed some thinning out so I added some low-sodium V-8 juice and a little water and that seemed to work. However, the next time I make this I will use the plain tomato juice to see how it turns out. I omitted the cayenne pepper entirely and added a 1/2 tsp garlic powder. I also added about 3-4 diced chipotle peppers plus some of the sauce they came in to add a smokiness flavor.

Easy Pumpkin Muffins

What a fantastically simple recipe! I used spice cake mix, plain pumpkin puree and sprinkled a little brown sugar on top before baking. They came out moist, springy and delicious. I can't wait to try this trick with other types of cake mixes and purees. TIP: Because the batter will be extremely thick, use a spatula to spoon and smear the mixture into your muffin cups.

Sweet Cornbread Cake

BEST cornbread recipe ever. I followed the recipe exactly and it came out perfectly. It was a huge hit at my party especially with those who have missed "conebred" the way their southern grandma had made it.

Key Lime Pie VII

I could not find key limes or key lime juice in my grocery store. So, I made this recipe with regular limes and (go ahead and gasp) real-lime bottled lime juice. My pie turned out wonderfully well! I served it at a party and everyone raved about it.

Lemon Icebox Pie III

While this pie is super-simple to assemble, it doesn't produce a super-foolproof result. My pie never really set-up properly so it was like eating a custard filling instead of a pie. Perhaps I added too much lemon juice? It may be better to list the number of tablespoons of lemon juice to be added rather than 2 lemons, juiced. I do like the fresh taste of a lemon pie, so, perhaps next time I'll nix 1 package of cream cheese in favor of about a 1/2 cup to 3/4 cup of sour cream. Then, I'll bake the pie for about 10-15 minutes before putting it in the fridge to cool.

Pizza Dough II

Delicious! Very easy to make. Worth the time to let it rise for at least an hour. I did make two adjustments though. 1.)I used all-purpose flour because I didn't have any bread flour and 2.)I used 1.5 cups of whole wheat flour instead of just .5 cup. I think next time I'll increase it to 2 or even 2.5 cups whole wheat flour and 3 cups of all-purpose flour.

Baked Chicken Wings

The easiest to prepare and mildest tasting wings I've ever made. I put them skin-side down at first, and then turned them halfway through cooking time. I took them out after 52 minutes to let them rest and they were cooked to perfection. My husband and I both loved them.

Homemade Focaccia Bread

This is a pretty fast and easy focaccia bread recipe that I was grateful to have found. However, it is quite bland! I found myself pouring more olive oil and sprinkling salt over the top of my baked bread because it was so blah. Next time I make it I'm going to replace the 2 tbs vegetable oil with 2 tbs olive oil and add the crushed rosemary, along with an additional tsp of dried italian seasoning, into the dough itself, as well as on top. Also, the texture of the bread isn't like focaccia in restaurants (which, to me, is more like ciabatta bread). It was fluffier.

Simple Coleslaw

I used prepackaged slaw mix (because that's what I had on hand) and made the sauce out of 2tbs vinegar, 2tbs sugar, 1/2 c light mayo, kosher salt, fresh ground pepper, 1 tsp minced shallot and 2 tbs minced cilantro and it turned out to be a great hit. I think next time I'll try it with 1/4 c plain greek yogurt and 1/4 c light mayo for an even healthier version.

Roquefort Pear Salad

Wonderful crowd pleaser! I looked up at the buffet spread and poof! it was ALL GONE. Quick tips inspired by the cooking style on that Semi-Homemade Cooking show: 1.) I used store-bought red-wine vinaigrette. 2.)I used store-bought candied pecans that cinnamon & sugar on them. 3.)I used blue-cheese because that's what the grocery store had. 4.)I used the "spring mix" salad in a bag. Those two shortcuts worked fantastically in this salad.
