Beef and Guinness® Stew

Had to change some measurements because I didn't have correct amounts on hand: I didn't quite cover my veggies (added turnips) with chicken broth, so used 2 11 ounce bottles of Guinness, didn't have fresh thyme so I used a teaspoon of ground instead, added a full 6 oz can of tomato paste (what am I going to do with a leftover 4 oz?) and then added a teaspoon of turmeric for good measure. It all cooked down quite nicely, no need to add flour to thicken, I'm guessing maybe from some of the starches released from the turnips? Served it with cheesy green onion mashed potatoes. My husband doesn't like beef stew in general and says he really liked this, so this recipe is a keeper.

Mmm-Mmm Better Brownies

surprisingly good. i used olive oil as it's all i had on hand and it turned out fine. i think a smaller pan would definitely suffice as the brownies turned out a bit thin, but there was no sacrifice on taste. will make again.

Tiramisu II

Somehow tasted a bit bland to me, even after spending the night in the fridge, but it is probably because I omitted the rum. I will definitely make it again, using rum, or marsala wine. Make sure you whisk the eggs and sugar with an electric mixer until they are light yellow before you boil them. Also, double your espresso mixture! Had I only made the 1/4 cup I don't think it would have been enough. Update: After two days in the fridge the taste improved considerably and got rave reviews- people were telling me i need to open a bakery!

awesome!! i used my immersion blender on the mixture before i put in any seafood and the result was a velvety stew with lots on flavor. i will definitely make this again, and serve with the italian bread (bread machine) recipe on this site.

Chicken Tortilla Soup I

love it. i browned my chicken first and then made it in my crock pot. i subbed cumin for the oregano, used only chicken broth, and it turned out fabulously.

not bad. i didn't have a problem with the dough spreading, but i did have a problem making uniform sized cookies. definitely get a cookie cutter and use that for reference! also, mine cooked in 6 minutes, keep an eye on them or they'll burn!

these were devoured instantly at the party i brought them to! i had to sub out brown sugar as i was out of white, and i grated the onion, but they were incredibly easy and quick to make- the recipe is definitely a keeper, thanks!! :)

Absolute Mexican Cornbread

cut the butter and sugar in half, and used 2 boxes of jiffy for the last 4 ingredients. i didn't have any peppers or green chiles on hand and i am sure that would have helped the flavor immensely. i might try to increase the butter to 3/4 cup next time for a bit of a creamier texture as mine turned out a tad dry, and cut down the sugar to 1/4 cup as it was still too sweet. however, the bf hates cornbread and loved this one, so i wouldn't write it off the way it turned out.

I am sure these would have turned out delicious had I not been drunk and measured the flour properly as they turned out too dry, but otherwise they look and smell amazing. Will definitely try again!

Very creamy and a little bland. I would suggest adding the squid AFTER the shrimp as it became very rubbery by the time the shrimp finished cooking.

Not bad, definitely not great. I think there is too much flour as the cookies turned out really dry and crumbly. I did however half the butter, which leads me to think I should have halfed the flour too. Not very peanut buttery either.

Rosemary Baked Potato Wedges

These are fantastic. I didn't exactly measure out the spices, and I'm pretty sure I used more than the recipe called for, but they turned out delicious. I did scale the recipe back and it didn't take the full 45 minutes for them to get nice and crispy, so you may want to keep an eye on them while they're cooking.
