Yummy Sweet Potato Casserole

Fantastic! I followed the suggestions to bake the sweet potatoes. Also, I inadvertently used the golden sweet potatoes, not the orange ones. Tasted delicious regardless! Will definitely be making this one again.

Mexican Cucumber Salad

A big hit at my house. The only change I made was to use fresh cilantro. Served as a side dish with tacos and then ate with chips the next day. Perfect for summer!

Habanero Pepper Cream Pasta

This was fantastic! I had a few modifications: I used a fresh habanero (one was perfect), half & half instead of heavy cream, and I didn't have a tomato, so I used a can of diced tomatoes w/green peppers and onions. It took a little longer for my sauce to thicken -more like 15 minutes, but I will definitely make this dish again. My husband loved it too.

Best Tuna Melt (New Jersey Diner Style)

I not a huge tuna fan, but I really enjoyed this dish. The swiss cheese cut the taste of the tuna. Next time I think I'll brown both sides of the bread and slice the cheese thinner.

Pasta with Spinach Pesto Sauce

I'm not sure what I did, but this recipe did not work for me. Mine did not look like the picture at all. The sauce was like a green soup and the flavor was just off. It's got good reviews, but I'm not sure what I did wrong.

Spinach-Infused Mashed Potatoes

This was a really good recipe. You can't taste the spinach in the potatoes at all..so a good way to sneak in some veggies! The bell pepper gravy was really good. I love the combination. I'm already wondering what else the gravy would be good on.

Pizza Casserole

I followed some of the other suggestions and used more sauce and cheese. I mixed in some of the cheese and also added some for the last 5-10 minutes as suggested in the recipe. I used veggie jalapeno cheddar sausage and that worked well. I'll make this again, but next time probably add more veggies: olives, mushrooms,...

Spinach Lasagna III

This is an awesome recipe! It was big hit at my house. I did a couple things to make it easier...I used no boil noodles and cooked the spinach in the microwave (in the bag that it comes in-fresh produce section). I used other suggestions and added artichoke hearts, but I left the mushrooms in as well. I was very generous with the sauce as well. I uncovered the dish the last 10 minutes of cooking.

Laura's Quick Slow Cooker Turkey Chili

This was awesome...I will definitely make this several times this winter. I'm not a huge meat eater, so I only used 1/2 lb turkey, but my meat eating husband didn't complain of the lack of meat. I didn't have tomato soup so I used some spaghetti sauce and some water...turned out fine. I took the other suggestions and used a can of Rotel and only one can of kidney beans.

Spaghetti Squash I

This was very easy to make (beside halving the squash for cooking!) and delicious! I served it with bread, but next time I think I will use it as a side. Wasn't really enough for a meal...

Alaska Salmon Bake with Pecan Crunch Coating

Savory Tater Tot Casserole

I took some of the suggestions; 1. browned the meat with garlic and onions. 2. added a can of cheddar cheese soup. My husband and I both thought this dish was bland. I'd definitely recommend spicing up the meat and adding real cheese.
