Grilled Peanut Butter and Jelly Sandwich
This has always been a 5-star sandwich for me. It was a tradition for me growing up and it is now my kids' favorite. Over the years, I found the least cumbersome and least messy way to "construct" the sandwich is to butter each slice of bread and put the buttered sides together. Spread the peanut butter on the unbuttered side facing up, then spread the jelly on top. Separate the slices of bread and put the "peanut buttered/jellied" slice on the pan, buttered side down, then top with the second slice of bread, buttered side up. No mess on your hands, no mess on the plate.

Best Spanish Rice
What an easy and delicious recipe! We used medium salsa and felt that it had plenty of flavor and a nice little bite. Thanks for sharing this.

Red Potato Bites
These were delicious and the biggest hit among all the food brought to a recent party. I used pre-cooked bacon bits (the real thing, not a soy product), which was a great time (and clean-up) saver. I found it was easiest to keep the potato half on my work surface while carefully scooping with a melon baller, A few skins did split,but who cares? They made a very appealing presentation and were even better to eat!
